Death by Chocolate

Reviewed: Jan. 6, 2004
I added vanilla extract to the cake and pudding. Next time I will not make instant pudding but rather the "cook and serve" kind, and also add a little bit more milk. I prefer the pudding slightly runny. Be sure to refrigerate at least overnight. Very easy to make and yummy! 1/28/05 I made this (again!) last night and added Kahlua to the coffee. YUM!!!! Also used the larger package of pudding.

Best Brownies

Reviewed: May 6, 2002
I didn't make the frosting b/c I thought it might be "too much". I also put a dash of instant espresso which was nice and subtle. I will definitely make this one again!

French Beef Stew

Reviewed: Nov. 14, 2005
This is going to be my beef stew recipe from now on... Great flavor! Here are the tweaks: I added 2C mushrooms, 2 celery ribs, used 2 ea. of yukon gold and red potatoes, 1 red onion, substituted the dijon mustard for about 1t of dry mustard instead (my husband HATES mustard, but can tolerate dry mustard) 1T worchestershire sauce, French Onion soup mix, deglazed the pan which browned the meat with approximately 1/2C red wine which was added to the stew. I cooked in the crockpot for 8 hours on low... and came home to a fabulous stew! I think next time I will increase the amount of potatoes and mushrooms as there was still room in my crockpot. Delicious!!!!

Roasted Chicken with Risotto and Caramelized Onions

Reviewed: Oct. 26, 2001
I've made this recipe twice already and has been delicious every time. I added a little bit of garlic, dried porcini mushrooms and parmesan cheese which gave it that added kick! Delicious!

Giant Ding Dong Cake

Reviewed: Oct. 26, 2001
Everyone loved this cake! Very simple. I cheated and used store-bought frosting (took off the foil seal, heated it in the microwave and just poured it on) to save time. It was a little too sweet for my liking and it didn't make a nice "shell" like the real Ding Dongs, so I will follow the recipe next time. This recipe made a lot of the cream filling, so I only used about half of it.

White Chocolate Raspberry Cheesecake

Reviewed: Dec. 27, 2004
Made this for a Christmas party and everybody loved it! Next time I will make the crust a little bit thicker and make extra raspberry sauce to serve on the side. Easy to make and a definite keeper!

Somewhere Over the Rainbow

Reviewed: May 20, 2005
I was looking for a SUPER easy and QUICK punch... Found it! I made this for a Mother's Day party and used ginger ale instead of the lemon-lime soda. Yum-mee!!!! Everybody loved it. Can't get easier than this!

Taco Casserole

What a breeze to make! I added fresh tomatoes (instead of the can), olives, garlic, chili pepper flakes and more cheese. Next time I will add corn, chopped cilantro and more chips. Definitely serve with the sour cream and green onion. I can't wait to make this again!

Creamy Coconut Cake

Reviewed: Aug. 26, 2005
This recipe is REALLY good and REALLY easy! I'd give it a 4 1/2 stars if I could... (I hesitate to give this recipe 5 stars since the cake comes from a box.) I used only about 3/4 of the coconut/milk mixture and made my own whipped cream. I, too, used coconut milk instead of the coconut cream like some of the other reviewers. Next time I will try putting chocolate shavings instead of the coconut shavings since my husband doesn't like dry coconut. Can't wait! YUM!!!!!!!!

Apple Cake VII

Reviewed: Aug. 29, 2005
I diced my apples instead of shredding them like another reviewer and really enjoyed the "chunks" of apples. Also used 1t cinnamon and 1t of nutmeg (ran out of cinnamon) which was nice. This was a really, really easy and delicious cake. I wanted to find a different/unique apple recipe that wasn't apple pie. This works!

I made this recipe by the book... Really delicious but next time I will decrease the amount of parsley and saute the mushrooms longer.

Pretty good but the glaze was a little too sweet for my liking. Next time I will use less sugar.

Banana Banana Bread

Reviewed: Jan. 31, 2005
I added approx. 1/2 c of mini chocolate chips and 1.5 t of vanilla to the batter. It tastes best when it's heated/toasted - too dense otherwise. Good flavor, though. I also added a little bit of sugar and cinnamon to the top of the loaf as it baked.

Orzo with Mushrooms and Walnuts

Yum! Everybody loved it! And it's so easy to make. I made some minor tweaks: used only one onion, substituted pinenuts for the walnuts and added minced garlic. Next time I'll add chopped parsley and truffle oil.

Baby Shower Raspberry Dip

Reviewed: Feb. 24, 2003
I substituted it with strawberry extract since the raspberry was twice as much. Turned out nicely. I added more sugar (3/4 c) and more extract (2T) and also added about a tablespoon of vanilla extract. People really liked the dip. In addition to the fruit platter, I included angel food cake.

I make a version of this recipe but I marinate for about 30 minutes and use fresh cracked pepper and salt and also balsamic vinegar. Always use good quality olive oil. Very good!
