Baby Shower Raspberry Dip

I substituted it with strawberry extract since the raspberry was twice as much. Turned out nicely. I added more sugar (3/4 c) and more extract (2T) and also added about a tablespoon of vanilla extract. People really liked the dip. In addition to the fruit platter, I included angel food cake.

Sausage Barley Soup

This is a really good and hearty soup. I used 8 c of chicken broth, 3 carrots (per other reviewers) and doubled the amount of barley, since I'm a huge barley fan. I cooked the soup in the crock pot for 8 hours (overnight) and then put in the fridge to later be heated up when I got home from work. I think it really let the flavors marry. Maybe next time I will try making this with hot Italian sausage (use bulk; easier to cook) and will keep the sausage in bigger pieces. I will definitely be making this one again!

Cheese Dip II

Added garlic, onion , tabasco sauce and cilantro. Delicious and very addicting! Be sure to use in a crockpot that is slightly bigger than 2qt. or consider preparing the dip on the stove on low heat and then transfering to a preheated small crockpot.

Somewhere Over the Rainbow

I was looking for a SUPER easy and QUICK punch... Found it! I made this for a Mother's Day party and used ginger ale instead of the lemon-lime soda. Yum-mee!!!! Everybody loved it. Can't get easier than this!

Chocolate Covered Strawberries

This was a very simple and good recipe but did not think that it tasted very well once refridgerated. The chocolate became very "chalky" and did not taste as good as it did before it was refridgerated.

Ahi Poke Basic

Super simple to make and was a big hit at the party! I served the poke on top of fried won ton wrappers with wakame salad and drizzled with sriracha sauce for some heat. I will definitely make this again.

Strawberry Dream Cake I

This is possibly the worst cake I've ever made/tasted. I am giving it a 2-star because the frosting turned out nicely. The cake itself was bland, despite the fact that I tasted the batter and it tasted fine. The texture was a cross between cake and cheesecake but reminded me of a dense bread pudding. Perhaps I was looking for a more cake-like texture... but it just didn't taste good. I would recommend mixing the cream cheese until almost whipped before adding it to the chocolate and hot heavy cream for a smoother consistantcy. (Strangely, I mixed the cream cheese for the cake but not the frosting. Could this be the reason that the cake turned out the way it did???) I brought this to a small dinner party and nobody raved about it, although somebody did like it because it wasn't too sweet. I will not be making this again.

Death by Chocolate

I added vanilla extract to the cake and pudding. Next time I will not make instant pudding but rather the "cook and serve" kind, and also add a little bit more milk. I prefer the pudding slightly runny. Be sure to refrigerate at least overnight. Very easy to make and yummy! 1/28/05 I made this (again!) last night and added Kahlua to the coffee. YUM!!!! Also used the larger package of pudding.

Roasted Chicken with Risotto and Caramelized Onions

I've made this recipe twice already and has been delicious every time. I added a little bit of garlic, dried porcini mushrooms and parmesan cheese which gave it that added kick! Delicious!

French Beef Stew

This is going to be my beef stew recipe from now on... Great flavor! Here are the tweaks: I added 2C mushrooms, 2 celery ribs, used 2 ea. of yukon gold and red potatoes, 1 red onion, substituted the dijon mustard for about 1t of dry mustard instead (my husband HATES mustard, but can tolerate dry mustard) 1T worchestershire sauce, French Onion soup mix, deglazed the pan which browned the meat with approximately 1/2C red wine which was added to the stew. I cooked in the crockpot for 8 hours on low... and came home to a fabulous stew! I think next time I will increase the amount of potatoes and mushrooms as there was still room in my crockpot. Delicious!!!!

Slow Cooker Beef Stew IV

This was really tasty but I'm only giving it 3 stars because the meat was on the dry side, although it was tender... Perhaps I used the wrong cut of meat or possibly overcooked it (8 hrs on low, 3 hrs on warm) OR there wasn't enough liquid. I substituted the 2 cups of water for 1 can of beef broth, thinking that the less liquid would be ok since my stews have the tendancy to "create" too much liquid. I added: more wine than the recipe asked; the worchestershire sauce as suggested; about 1 1/2 c of frozen peas to the last 30 mins of cooking; and about 2 cups of mushrooms but will add more next time. Next time (and there will be a next time!) I will use 2 cans of beef broth and more veggies. Delish!

Giant Ding Dong Cake

Everyone loved this cake! Very simple. I cheated and used store-bought frosting (took off the foil seal, heated it in the microwave and just poured it on) to save time. It was a little too sweet for my liking and it didn't make a nice "shell" like the real Ding Dongs, so I will follow the recipe next time. This recipe made a lot of the cream filling, so I only used about half of it.

I think this recipe has a lot of potential. Next time I will increase the time to bake the brownie only. I think next time I will break the graham crackers smaller than 1". Overall, a VERY simple and good recipe

Chocolate Pudding Cake II

40 minutes was too long for my cake... the pudding part was practically cake and hardly any pudding. I used quality choco (Scharffenberger), so I don't think that was the problem. I will not be making this again.

Apple Cake VII

I diced my apples instead of shredding them like another reviewer and really enjoyed the "chunks" of apples. Also used 1t cinnamon and 1t of nutmeg (ran out of cinnamon) which was nice. This was a really, really easy and delicious cake. I wanted to find a different/unique apple recipe that wasn't apple pie. This works!

Beef Barley Vegetable Soup

I followed the advice of other reviewers and just put everything in the crockpot minus the barley (put in last hour of cooking) and cooked it for 7+ hours on high. The meat took that long to soften up. Taste was pretty good but was not exactly what I was looking for. I think I would leave out the frozen veggies next time, add 1/2 an onion more, more celery and perhaps zucchini, porcini mushrooms and/or potato to the mix.
