Epic Mashed Potatoes

I made this for Thanksgiving dinner and it was a big hit! Epic, indeed! My only problem was that I didn't have "baking potatoes" (which I believe must be a lot larger than regular potatoes), so I used a few more of my regular size potatoes, but I still ended up with too much creaminess and not enough potato. For this recipe, if you don't have large baking potatoes, I would recommend using about 8 regular size potatoes to provide adequate texture and vegetable to disperse the epicness into!

Chicken and Apple Curry

Excellent flavor, easy to make. I had to serve more people than I had chicken breasts, so I cut them up into bite-size pieces and sauteed them in the pan; then added the chicken to the curry mixture and simmered in the pan for about 20 minutes instead of baking. I served over rice that I cooked in chicken broth and added a bit of curry to. Turned out great!

Whole Wheat Honey Bread

One of the best loaves of bread I've ever made in my bread machine over the past 5 years or so! Light and sweet; excellent recipe! I didn't think whole wheat breads could come out this light and soft. I substituted about 1/2 c of regular flour for some of the whole wheat flour because I thought it would make it lighter and more enticing to my (picky) son, but I don't think I needed to do that anyway. Bread machine settings I used: 1 to 1.5 lb loaf, whole wheat, light crust.

Harvest Yams

Ditto on increasing the cooking time. After I baked them in the oven for 25 minutes they were still hard so I microwaved them for about 6 minutes. Great taste though, and even my picky son ate them!

Pesto Polenta Lasagna

Great easy dish to make with everything I had on hand already. I didn't have the tube-type polenta, so I made it with the cornmeal I had (3-1/2 c water to 1-1/4 c cornmeal). Then I just spread the polenta in the pan, and by the time I got to the second layer, the rest of the polenta was cooled off enough to cut into slices for easier placement. I sprinkled some of the mozzarella on top of the first layer as well because I love cheeeeeeeeeeeese. :)

Cheese and Bacon Potato Rounds

My very picky teenage son loved these! I didn't have any regular bacon, so I used a package of real bacon bits in a bag. I added garlic powder to the butter as someone else had suggested and sprinkled with seasoned salt at halftime of baking after turning. These came out great!
