Lemon Cream Pasta with Chicken

I did make some changes to this recipe - as others did - but the thing I love about it is the cooking method for the pasta. If you make sure to keep the temp to a low simmer - it works amazingly well. It's not al-dente - but perfect for fettucini. I cook pasta like this quite a bit now, as I can put it on and do other things while dinner is getting ready. It's worth figuring the temperature and pasta out! As for the rest of it - sauteeing the chicken makes it faster, cut the lemon juice a tad and you can add onions and green peppers to the sauteeing chicken. I taste the sauce right before serving and if I happened to have gotten a sharper lemon flavor than I wanted add a pinch of sugar. Also you can change the falvors of this - I've done an asian version with pineapple juice, snowpeas and soy.

Golden Sweet Cornbread

I've made this several times and the only thing I would change is the amount of baking powder - I could taste it in one batch. Other than that very good - I've added cheddar cheese, cream cheese, corn, and jalapenos. Yummy!

Rhubarb Spice Cake with Lemon Sauce

I made this for the dessert at our traditional easter dinner. Fantastic! I did a layered 8" cake with lemon cream cheese frosting - it was a huge hit. Will do again, maybe with the original lemon glaze.

Spicy Garlic Lime Chicken

This was very good! I made one or two quick changes because of what I had on hand - I used the juice of one orange, one lemon and a splash of Rose's lime juice. It reminded me of a Caribbean version of Cajun blackened chicken. I'll definitely make this again.

Salsa Chicken

This is a great side dish - sauteeing the rice ahead of time makes the grains not stick together so it heated up well as leftover too. Thanks!

Roasted Curried Chicken with Couscous

This was a very nice curry with some subtle additions. I used it mostly for the spice combination, and it came out great on boneless skinless chicken breasts. Make sure that you use smoked paprika - the plain mccormick stuff will not add anything to the recipe. Also, I was out of couscous so I made grits. The only thing that I changed flavor wise was not no duplicate the spices exactly in the grits - I wanted a little variation. I am sure you could add fruits like raisins or cranberries, and veggies as well. I will use this spice combination again.

Ultimate Potato Soup

I too trimmed the fat and salt in this one - I used 2% milk and pureed about half the soup to make it really thick and creamy. I also used homemade chicken stock, so no salt to worry about from the bullion.

Smoked Sausage and Apple Bake

I typically like apples and sauerkraut. I made this with a smoked turkey kielbasa. But something didn't work for me - I think it was the cream paired with the vinegar from the kraut. I'll stick to no cream next time.

I reduced the liquid as other members suggested and decided it was a bit bland. I tossed in some oyster sauce, an dhad a pretty decent brown sauce.

Clone of a Cinnabon

Like this needs another fabulous review!!! I am giving 4 stars because while it is a fantastic cinnamon roll, it's not quite a clone of a cinnabon. The dough is a bit cakier - but it's great!

Easy Mini Quiches

As one poster pointed out, these are not quiches, but they sure taste like it. They were quick and easy to make, easy to transport and were the first things to go at a 100 person BBQ. I experimeted with my favorite quiche fillings - mushroom/swiss/tomato, ham/tomato/cheddar, mushroom/leek/swiss. Fantastic addition to a party!

I did make a lot of additions to my version of this recipe, but the base was fantastic and the proportions were perfect for spicy-ness. I wanted to make a main dish out of it, so I added tinned tuna, which was wonderful!
