Ginger Glazed Mahi Mahi

I loved this marinade! I wanted fish and everyone else wanted steak - when they tried mine, they were all jealous. I will definitely make this again, soon I hope!

Salmon Tango

This was wonderful! I added a little bit of garlic to it, and marinated my fish for about 2 hours. I ended up baking it at 375 for about 25 minutes until the fish flaked nicely. I will definitely make this again!

Herbed Greek Roasted Potatoes with Feta Cheese

I scaled this down to serve two people - so definitely not 5 pounds of potatoes :) I loved it and was able to use fresh herbs from the garden. A friend who doesn't like feta even enjoyed it.

Rosemary Chicken with Orange-Maple Glaze

I enjoyed this quite a bit, the fresh rosemary is a great compliment to the orange sauce. Ultimately I thought that it was a tad too sweet, so I ended up adding a chicken bullion cube to the sauce at the end. In the future I will cut the maple syrup in half to get a little more savory sauce.

Banana Blueberry Muffins

These were good and I probably will make them again for myself. That being said, the whole wheat flavor was incredibly strong, and the muffins were dry. If you want a moist flavorful muffin this is not the recipe for you. I was the only one in the family that liked them, though everyone did eat them.

Cucumber Tomato Salad with Zucchini and Black Olives in Lemon Balsamic Vinaigrette

I really enjoyed this salad as a use for garden veggies! The dressing was nice and flavorful but not too radical - I did think it was a bit much, so i cut it in half. The second day I added tortellini to the leftovers - they were gone before I got any. I will definitely make this one again.

Oven-Fried Catfish

I loved this! I love southern fried catfish, but I cannot get it where I live and I hate frying fish at home. This was the perfect remedy for my craving. I used hot hungarian paprika, added 1/2 tsp of dry coleman's mustard and no salt to the corn meal. Perfect. I'll be trying this on other fish when I cant get catfish!

Eggplant Parmesan II

Thanks for the winner! I chose to salt the eggplant slices ahead of time to draw the water out, because I like the flavor and texture better. I used part spaghetti sauce and part of Bud's tomato gravy from this site. I also tossed in fresh basil instead of dried and soem fresh spinach. What a great way to use up tons of veggies from my garden last night!

Lemon Lavender Avocado Loaf

Very interesting. I love cooking with lavendar, and after reading all the other reviews decided to add a little bit more to the bread - it was too much. Lavendar can be overpowering, so try it first with only what the recipe calls for. Otherwise this was a winner and I will make it again.

Seafood Stuffed Avocados

After one bite of this, it was requested again for dinner tonight, so i think it's a winner. I used shrimp only, added the avocado back in, and tomatoes/red onions per another reviewer. I also added a splash of lime juice because I love lime on avocado and shrimp. I doubt I'll make it again tonight, but I will make this again!

Cindy's Awesome Clam Chowder

I've been wanting to try this for ages, but couldn't find leek soup. I've had all of the other ingredients ready to go. I finally found dry potato leek soup and figured that was good enough. It was. Delicious! I added 2 stalks of finely chopped celery, and used 1/2 qt of half-and-half with 1/2 qt of skim milk sicne my tummy can't take all the cream. Thanks for a wonderful soup, I will make it again!

Braised Lamb Shanks

I can't speak highly enough of this. What a nice change from mint jelly or rosemary! Everyone at the table loved it, even those who were not (previously) lamb fans. I did cut down the vinegar a bit per other reviewer's recommendations. This has already been requested for hunting season with venison, and I know that it will be a big hit.

Mini Corncakes with Basil, Avocado Spread and Smoked Salmon

I enjoyed this, but I think that it could be improved on. Next time I think having another texture would be great - some finely chopped red onions or shallots would really set it off I think, and perhaps some rough ground pepper on top.

Rosemary Chicken on Navy Bean, Cheddar and Arugula Salad

This was a really nice dinner. I had turkey breast cutlets on hand and used those. Other than that, I added a few slices of red onions that I had leftover. It was a meal that I will definitely eat again - thanks!

True Blue Custard Crunch Pie

How wonderful! I have a love hate relationship with blueberry pie, in that I love it, but it's so sweet that I can rarely eat more than a few bites. Not this pie. I loved it, and am looking forward to eating it all week.

Grandpa's Tomato Gravy

There's something really timeless about tomato gravy which is not the same thing as marinara sauce. The flavors meld together with the long simmer and it's wonderful. I personally like to use the diced fire roasted tomatoes in this sauce. Wonderful and simple. Thanks Bud!

Scalloped Potatoes and Onions

I was skeptical, but glad I tried it. I've never made scalloped poatoes without tons of cheese and a million calories. I did use nayonnaise (soy based mayo sub since I am allerica to mayo) and it turned out nicely. Thanks!

Teriyaki Venison

This is such a simple recipe and so good. I don't eat venison, but I cook it alot, and this recipe stands out as simple, requested often and no-fail. I would make sure not to use a really thick teriyaki sauce, nor one that is too sweet. But if you have a good teriyaki marinade, and a nice flavorful cajun/creole spice blend this is a wonderful way to have a little sweet, a little spicy...I think that it would also be good on goose or other dark game meat.
