Pecan Cranberry Coffee Cake

Reviewed: Nov. 22, 2010
I'm editing my review from yesterday because I just figured out the problem wasn't that there wasn't enough cranberry sauce called for in the recipe. The standard sized can of cranberry sauce has changed - the standard can is now 14 oz instead of 16 oz. I picked up the regular can at the store, and ended up a little short in the recipe. So I stand by that I would definitely make this again, with some changes. With one can of drained sauce at the new 14 oz size, you will not have enough for 2 layers. So, in the future, I'll use 2 cans of cranberry lightly drained. I also though that the nut to sugar mix wasn't nutty enough for the topping. I didn't have more pecans, so I added some almonds. However, next time I will definitely use 2 C of pecans instead of one in the topping mix. Thanks!

Jamie's Minestrone

Reviewed: Nov. 11, 2010
I love this recipe, and it is a true standby now. I add other veggies depending on what I have in the house, but the only thing I relaly recommend is to add a splash of balsamic vinegar near the beginning, it adds a wonderful depth to the soup!

Panzanella Salad

Reviewed: Nov. 11, 2010
This is a household favorite. Even the man, who abhors soggy bread agreed to try it, and asks for it all summer long now when the tomatoes are growing!

Shrimp Asopao

Reviewed: Nov. 10, 2010
This was really tasty - with the flavors and seasonings it was like a mix between paella and jambalaya, but still very different from either. I followed other reviewers suggestions and used a can of tomatoes since fresh tomatoes are awful this time of year, and I added some cilantro. Overall very tasty - thanks!

Southern Hollandaise Sauce

Reviewed: Nov. 8, 2010
Very tasty! It was a little heavy on the lemon, so depending on what I was serving it with, I might lessen that a bit in the future, but on salmon, it's lovely just the way it is!

Fabulous. Beyond belief delicious. one of the best textured cakes I have ever made. My pears were a little on the small side, so next time I'll make sure I have more pear in there.

Roasted Rosemary Cauliflower

Reviewed: Oct. 28, 2010
I am a fan of roatsed cauliflower, and loved having a new use for my giant rosemary bush. I only caution other cooks that when roasted too long, the cauliflower can definitely get mushy, so watch your cooking time based ont he size of your florets!

Cod with Italian Crumb Topping

Reviewed: Oct. 28, 2010
This was ok, for a weeknight meal, but I wasn't thrilled by it. I will try this again with fresh fish, as I used frozen fillets. I use them from time to time, with good results, so I'm not sure it was the fish. Thanks.

Sauteed Swiss Chard with Parmesan Cheese

Reviewed: Oct. 25, 2010
Thanks for such a lovely quick recipe! I love swiss chard, but many are scared to try it - everyone liked the dish, though only us die hard charders had seconds :)

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Reviewed: Oct. 23, 2010
This flavor combination was lovely. I made the sauce and used the dry rub on chicken breasts that I braised after searing in a cast iron pan. The only thing I would do differently would be to add a little cayenne to the rub, I ended up wishing it was just a little bit spicier. But the flavors, total package and appearance were wonderful. Can't wait to try this on the grill next summer!

Shrimp and Blue Cheese Dip

Reviewed: Oct. 21, 2010
I was pleasantly surprised by this recipe! The ingredients sounded like they would either go together well or not at all. Overall, I ended up adding some diced red bell pepper to the top at the end, and I did not cook the green onion - without this, it wasn't the most appetizing looking dip, but was quite lovely with some color. Also, in the future, I would add a few more shrimp. This will serve 3-4 people as a generous appetizer, so even though it says 12 servings, I would count on that making enough for just a few people. Overall, with some presentation help, and making sure you don't want to serve 12 people with it - this was a nice recipe. Thanks!

Basil Dill Coleslaw

Reviewed: Oct. 19, 2010
For a simple, no frills coleslaw this was great! the only negative comment I got was that I didn't chop the cabbage fine enough. The recipe said "Shredded" but at home I didn't have anythign to shred it with, so as a first time homemade (from a cabbage not a bag) slaw maker, I didn't cut the cabbage thin enough. So next time I will really chop it to get it as fine as possible!

Make-Ahead Baked Egg Sandwiches

Reviewed: Oct. 7, 2010
I'll rate this a four, because the taste was fine. I personally don't need that much egg, so I cut the egg part in half, one is fine for me. The real reason for my review is that you really need to play with your microwave to figure out if this works for you. This recipe does not work in my microwave oven. I can adjust and do the eggs on half power without the bread, and put the cheese on later, but that doesn't work with my morning - I need something that I can nuke and go. so I have a freezer full of these, which I have been taking out on Satursday mornings, dissasembling, heating and eating. Every microwave oven is different, so that's not anything against this recipe, just a little dissapointing :(

Bruschetta Chicken Bake

Reviewed: Sep. 14, 2010
I wish I could give three and a half stars for this. The flavor was very nice, but the bread topping got quite soggy, not a texture that anyone in my family is a fan of. I might consider trying this again with homemade crusty bread croutons that wouldn't get so soggy (cut into larger chunks) and putting less liquid in from the tomatoes. This recipe has potential, but as written it was not for us.
