Orange Chicken Stir-Fry

Reviewed: Dec. 11, 2008
I enjoyed this simple stirfry - and it happened to be that this was all I had in the hosue anyway! Reading the reviews about lack of flavor, I decided to cook my chicken with juice and soycause instead of adding the sauce afterwards - worked perfectly. I did add a touch more OJ, but that was my personal preference.

Delicious and Easy Mock Risotto

Reviewed: Dec. 7, 2008
I love risotto, and half of what I love is the anticipation of it, all that stirring and smelling while you wait. However, I do not have unlimited amounts of time, and in a pinch this has substituted nicely. I have even made it with some of my favorite risotto add-ins like mushrooms and crab.

Sweet And Sour Chicken Meatballs

Reviewed: Dec. 7, 2008
I really enjoyed these and so did my nephews. I made them with ground turkey as that was what I had on hand.

Grand Marnier Chicken

Reviewed: Dec. 7, 2008
This has become a staple in my house since I discovered it a year or so ago - but I just realized that I had never rated it. Over time I have adapted it to make the breading a little easier, and realized that thesauce is even better with southern comfort. Thanks!

Chicken Makhani (Indian Butter Chicken)

Reviewed: Dec. 7, 2008
Overall I liked this recipe. Like other reviewrs, I thought it was lacking something, but realized that for the most part all of the flavors were right, juts not enough. I ended up doubling the ginger, garam marsala, cumin, lemon juice and garlic. Then it was delightfully flavorful.

Chicken Tequila Fettuccini

Reviewed: Dec. 7, 2008
I have been meaning to make this recipe for over a year - and I finally did. It was very tasty! I ended up having to use lemon instead of limes because I was out and didn't know it until I was cooking. The only recommedation I have is to use low salt soy sauce, because it was a tad slaty. Thanks for the recipe!

Cauliflower Cheese Pie

Reviewed: Dec. 1, 2008
Ultimately I was not a fan of this recipe. I thought that the potato crust, while it sounded good, was a lot of work for not much flavor. This tasted fine, it was just a bit more time consuming and not generally worth the extra effort for my kitchen.

Herbed Whole Wheat Bread

Reviewed: Dec. 1, 2008
I made this bread for my thanksgiving stuffing this year and it suited that purpose well. After reading the reviews I tried to help it up a bit by adding a tad more yeast than called for and cutting the whole wheat flour down by 1/2 C. Even so, I didn't get a really solid second rise from it. However, the flavor was great, and most wheat breads can be trickier, so I don't think it's the fault of the recipe at all. I will keep using this herbed bread recipe til I find one I like even more. Thanks for the recipe!

Slow Cooker Stuffing

Reviewed: Dec. 1, 2008
This review is for the cooking method and time not the ingredients! I have always been worried about not cooking my stuffing in the oven with the turkey, but this year I simply didn't have the room. This recipe used very similar quantities to my family's traditional recipe, so I adapted the method and was thrilled with the results. I will always make stuffing like this in the future.

Slow Cooker Sauerkraut and Sausage

Reviewed: Nov. 18, 2008
I love this dish - though many people simply don't like the flavor of sauerkraut and like it even less when it's sweet and sour. I add diced green peppers and onions to mine, but overall, for those kraut lovers this has just the right amounts.

Merritt's Butternut Squash Gratin

Reviewed: Nov. 17, 2008
I can't believe that I forgot to rate this one - not like he needs another rave review, but I loved this recipe, and will make it often. For those worried about the expense of the Gruyere cheese, you can also make it with mozzarella or cheddar or a nicely flavorful swiss. I have my own all year herb pots so I made it with fresh rosemary and thyme.

Leek Potato Mushroom Cheddar Soup

Reviewed: Nov. 17, 2008
When I first made this soup I didn't fall in love with it - but for leftovers the next day it was very good. So I recommend letting this one sit for a little while to meld the flavors.

Roquefort Pear Salad

Reviewed: Oct. 31, 2008
This salsd may be the way to a man's heart! I personally removed the avocados since I am not a fan, but the dressing combined with the nuts, pears and a mix of lettuce and arugula was wonderful. I will definitely make this again!

Horseradish Mustard Dip

Reviewed: Oct. 31, 2008
This was execellent! I spiced it up since that is our personal preference by increasing the horseradish and doubling the mustard and chives. I also added a sprinkling of mozzarella cheese and fresh chives on top as a garnish. I will make this again.

French Buttercream Frosting

Reviewed: Oct. 17, 2008
I thought this was a great icing recipe. I cut the batch in 1/2 and then split it for coloring. Had a good flavor - and nice texture. I like the texture of buttercreams made with shortening, but hate the flavor, so this was a nice mix for me. This will be a standard icing for me.

'Chinese Buffet' Green Beans

Reviewed: Oct. 8, 2008
This was pretty good - I think that oyster sauce is sweet enough so I did not add the extra sugar and I did use low salt soy sauce.

Kevin's Teriyaki Chicken

Reviewed: Oct. 8, 2008
I made this with crushed pineapple instead of pineapple juice, because I had some that I needed to use up, and it was wonderful. Not too salty, not too sweet. I'll make this again.

Melon Trio with Sherry and Mint

Reviewed: Oct. 6, 2008
I liked this melon recipe as a 3.5-4 star when I forst made it, but then I decided to serve it with a touch of vanilla yogurt, granola crumbles and added more mint - it was fabulous and my guests loved it. The quality of your sherry also plays a big role - higher quality sherry does have a mild flavor, not the strong flavor you typically get with a cooking grade sherry.

Lemon Coconut Squares

Reviewed: Oct. 5, 2008
These were very good. I liked the extra lemon - most recipes call for about 1/3 C instead of 1/2 C and think that I will keep that ratio for the future. I also liked the addition of coconut. If I ever need dessert with only pantry items, this will definitely go to the top of the list. Thanks for a nice recipe!
