Sugar Snap Pea and Berry Salad

I wish I had followed SunnyByrd's suggestion to add a splash of lemon juice and walnuts - I think that would have really pulled this salad together. As is is was good, but it could have been great!

Zucchini and Tomato Casserole

Thanks for another great zucchini and tomato recipe - I used a mix of green zucchini and yellow crookneck squash. I was skeptical about the dill and basil together - but I am so glad I didn't leave the dill out. This will be a sumemr favorute when my garden is producing!

Andrew's Herb Risotto

This was a wonderful risotto recipe. I adapted it to a cardiac diet by using salt free low fat homemade chicken stock and adding a dash of red wine vinegar along with the lemon juice. The flavor of the herbs and fennel was great and made it so that no one missed the salt. Thanks for the great recipe!

I had difficulty with the meringue but they are tricky little devils. this was a wonderful recipe, and I will be making it many many times in the future. My guests were almost licking their plates - thanks for the fabulous recipe!

Awesome Baked Sea Scallops

I was expecting to really love this recipe, but I think that overall I far prefer sauteed scallops. There wasnt enough flavorin the sauce, and think I would have preferred plain butter to the slight nutmeg taste. But the guests were happy with them, so that's what counts!

Renaissance Stuffed Mushrooms

This was a fantastic stuffed mushroom recipe! I used sriacha as the hot sauce, and baby bellas for the shrooms. I think that I have a permanent mushroom recipe! I will say that there was way more stuffing than mushrooms, so next time I will double the mushrooms for the same amount of filling.

Divine Hard-Boiled Eggs

I really like this method of hardboiling eggs, but I think that I would have liked 1 more minute of my eggs. The color is lovely, and they made good deviled eggs, but next time I'll do 16-17 minutes.

Low-Fat Corn Bread

I agree with other posters that compared to regular cornbread - this is a poor comparison - but for anyone on a cardiac diet this is a wonderful recipe! I have a difficult time coming up with replacement foods for my grandparents, and I cook for them frequently. For anyone who needs to cut down on fat and sugar this is a fine recipe. For those of us who don't - yes it is rather bland.

Savory Stuffed Chicken Breast with Plum Glaze

This is an edit to my previous review - this recipe has been very well received by everyone who has eaten it. I have made it with peach jam which was too sweet and finally found the plum jam - which was worth looking for - it really made the recipe. I have made it according to the directs, and I have made it as a layered casserole when I felt that stuffing the chicken would be to time intensive. It adapts well to a cardiac diet by using low fat/salt plain cornbread and turkey bacon. I stand by my recommendation that you use a savory cornbread - not a sweet cornbread for the stuffing. Overall a great dish!

Mushrooms and Spinach Italian Style

I love this recipe! I usually eat it as a side dish, but last night I topped chicken parmeasean with it for a lovely take on an old favorite. I had to use red wine and that was different, but wonderful as well.

this was a very nice and simple sauce. I used a can of diced tomatoes and tomato sauce, as that was all I had, but the spice mix was just right. I finished it with a splash of balsamic vinegar - used this as the sauce for chicken parmesean. Thanks for the easy pantry alternative to storebought sauces

Famous Butter Chicken

I have been resisting this recipe for a long time because it seems so unhealthy and so plain. I made it last night when there was literally nothing left int he house to cook - I was surprised at how good it was! I did add some basil and garlic to the egg wash. I also cut the butter in half, but drizzled some olive oil on the chicken as well. The time/temps were perfect, the chicken was juicy and very flavorful. I'm sorry I waited so long to cook this one!

Roast Chicken with Thyme and Onions

This is a great recipe for a standard roast chicken - the herbs and lemon really standout. The only caution I have for cooks is to make sure you use a larger bird. I made this with a small bird and whiel the meat wasn't done until the directions, the bird came out fairly dry. If you are going to do a small bird, make sure to tent the bird with foil and baste to keep it moister. This is what I should have done, and will do the next time I use this recipe.

Caraway Rye Bread

This was a lovely rye bread - nice and flavorful. Mine didn't rise quite as much as I would have liked, but that's certainly not the recipes fault. I did increase the caraway to suit my tastes.

Chicken Tortilla Soup IV

This was a great soup for being sick - like others I thought that it needed a little bit more oompf - so I added a diced onion, some garlic and green pepper + a bit more chili powder to really kick up the spice factor. I will definitely make this again.

Artichoke Spinach Lasagna

I made this for a non-traditional Christmas dinner and it was pretty good. I learned that I do like my lasagne to be very cheesy and I missed the ricotta, so next time I would add that. Other than wanting to chaneg the cheese it was great.

This was great - and exactly the kind of homey meal I was looking for. I don't eat pork, so I made it vegetarian with fantastic results by adding a clove of garlic, a splash of Liquid Smoke, and I used sour cream instead of milk to make it a bit heartier. Thanks for the recipe!
