Slow Cooker Latin Chicken

It was nice to see a recipe calling for thighs instead of breasts - and the meat was wonderful! I ended up using this as a topping for nachoes one day, burritos another and as a full entree as well. Thanks for the recipe!

Slow Cooker Marmalade Curry Chicken

In the end I really enjoyed this recipe, but I did make few changes to it - the cooking times and proportions were perfect, but I decided to add more stuff - green peppers, ginger and some coconut cream to make it a sweeter/spicy curry. Overall, curries should have some flexibility - add a little or a lot of many things to suit your moods and this recipe is perfect for that!

Ravioli Lasagna

The flavor was OK, but I didn't like the texture of the ravioli after it was baked. Some of them were a little chewy, some were gummy and some were crunchy.

Stuffed Pepper Soup IV

LOVED IT. I agree that I wanted a tad more flavor than the seasonings indicated - so I added a splash of red wine, some garlic and basil as well as a little worcestershire sauce when I was browning the meat. None of my personal seasoning decisions make this less than as written - I just wanted it to have a bit more kick. Thanks for the recipe!

Chicken and Dumplings IV

This turned out pretty good - the dumplings were great (love me some flat dumplings!) I did add carrots and some thyme. I also used homemade stock instead of bullion that was in my freezer and needed to be used up. Thanks for the dumplings!

Orange-Glazed Asparagus

Loved it! I will say that I made it with green beans, but I switch back and forth between green beans and asparagus recipes all the time. I will definitely make this with asparagus next time it's on sale. Thanks for the yummy recipe!

Carrot Rice

I really wanted to love this - and I did like it alot, but I felt it needed more ginger and something else. So at the end I added a dash of ground ginger and a splash of lemon juice. It was much closer to what I thought. I will make this agin but I'll put in a bit more of the seasonings, and likely some lemon juice.

Trinidad-Style Curried Potatoes (Aloo) with Green Beans and Shrimp

I really liked this recipe and can see that with all great curries you can play with it at much as possible to make infinite variations. I wanted a little less broth and a little more curry so at the end I cooked off some broth and added about another 1/2 Tablespoon of curry powder. Thanks Pixie for a wonderful recipe - next time perhaps I'll make some naan to go with it!

Chicken Marsala Florentine

I love marsalas and I love to do new things with them, so this was right up my alley. I used a dry marsala and my homemade sundried tomatoes, so this dish was slightly acidic (the result of my ingredients) - I fixed this by adding half a teaspoon of brown sugar. I also love the sauce so much I made about 1/2 more, by adding chicken stock and another splash of marsala - this gave me enough sauce to drench the rice! If you are using dry sun-dried tomatoes don't forget to soak them for 15 minutes in hot water, and if you are using oil packed sun-dried tomatoes don't forget to drain them. In the future I would likely add a clove of garlic and some thinly sliced onion to the veggies.

This was exactly what I wanted for dinner tonight! I made some extra sauce so that I could top my rice with it. After reading the reviews I realized that the flour on the chicken was likely not enough to thicken the sauce as other reviewers had mentioned, so I used about a tablespoon of Wondra at the end to finish the sauce off. Also I used Chardonnay wine.

Orange Rice Pilaf

I really enjoyed this rice recipe. It had a nice light orange flavor that went perfectly as a side to my light chicken in white wine. This isn't an orange sauce like chinese food if that's what you're looking for, but I think the citrus is refreshing.

WOW! This is an awesome drink to warm you up. I was tempted to make myself a grownup coffee drinktoday but still had tons of snow shoveling to do so this looked like the right thing, and it was. Since it was just me, I used cofee I had percolated and heated it on the stove with seasonings and I used carob instead of chocolate for dietary needs. I will definitely make this again and may not wait for the next snowy day to do it!

Raspberry Kielbasa over Cheese Grits

I loved it! You have to like sweet and savory combinations to like this, and liking grits is important too. If you like all of these things you'll love it. I realized after I started cooking that my mushrooms weren't good, so I proceeded ahead without them, but I can see that they would add another great flavor.

Lentil and Buckwheat Salad

I loved this and will definitely make it again. I had trouble finding buckwheat so I used bulghur wheat which is similar. Other than having to adjust the times slightly due to the wheat this recipe was fabulous. The only recommendation that I have is that the water/broth from cooking lentils/legumes can add to the unpleasant after-effects of eating them, so I used fresh vegetable broth instead. Thank you for this recipe - it will be a household standby!

Hot 'n' Spicy Buffalo Chicken Salad

Loved it! I made it as a cold chicken salad to use up some shredded chicken and it was just what I wanted for a nice light dinner. I'm looking forward to trying it again as a main meal salad not on a sandwich too. Thanks Celeste!
