Slow Cooker Chicken and Dumplings

Very good, but the biscuits came out very "dough-ey." I used Cream of Broccoli soup and it still tasted great.

Asian Beef with Snow Peas

Fantastic! I found it very delicious and satisfying, and even my very picky 4 year old (who will usually not touch anything besides chicken nuggets)devoured it! This has become a weekly favorite in our household. Perfect served over brown rice. I added red peppers and broccoli for more variety, but the sauce would be absolutely delicious over any combo of veggies.

Alyson's Broccoli Salad

Served this at a potluck and I wasn't able to have any because it was gone so quickly! I did use grapes instead of raisins as an earlier reviewer suggested, and omitted the sunflower seeds to adjust to a younger (preschool age) crowd. Also substituted miracle whip for the mayo and it turned out great- I did get to taste it before I brought it to the potluck. Definitely a crowd pleaser.

Pepperoni Bread

Delicious. Made with frozen pizza dough ball (in freezer aisle), and did use the egg wash. Highly recommended to satisfy that pizza craving!

Chicken and Corn Chili

I used only one chicken breast, but it was rather large (Tyson). Only had frozen corn on hand so substituted that for the canned. Came out very thick, less liquid-y than others' pictures suggest. Instead of the night before, I placed the chicken in my crock pot the morning of and shredded after 6 hours. Very tasty, similar to a beef chili but with a touch of Mexican flavor.

Cheddar Bay Biscuits

Excellent and just like the biscuits served at you-know-where! I used heart-healthy Bisquick instead of regular and it didn't make a difference. As another reviewer suggested, I added parsley flakes to the batter, and returned the biscuits to the oven for 2 minutes after brushing with the butter/garlic powder/parsley flake mixture. Served with Chicken & Corn chili from this site. The whole meal was delicious!

Lemon Herbed Salmon

I used only about 3/4 lb. of salmon and halved the recipe for the topping. Accidentally mixed all the butter in with the bread crumbs, etc. but still turned out great. Used dried parsley flakes and thyme instead of fresh. Took about 35 minutes instead of the stated 25 to bake. Tasted delicious! I would serve with lemon slices to squeeze the juice on next time, just to add a little more of that citrus taste.

Peanut Butter Easter Eggs

When I had my boyfriend taste the peanut butter part (before dipped in chocolate), his reaction (verbatim) was, "Whoa.. mm.. too good!" After dipping in chocolate, tasted even better. Caution: this recipe is very sweet & very messy, but even if both bothers you it may still be worth it. A very good treat, I would even say better than Reese's peanut butter cups. Followed recipe exactly with 2 exceptions: 1)Mixed some milk chocolate chips in with the semi-sweet, and 2)microwaved shortening/chocolate mix because I don't have a double boiler. This is a great treat for any time!

Emily's Excellent Taco Casserole

Delicious, quick, and simple. Literally threw the ingredients together and popped in the oven in less than 5 minutes. Used blue chips, and served with tomatoes, lettuce, onions, and salsa. I've made similar casseroles using leftover taco meat in the past, but appreciate this meatless alternative (which is equally hearty!).

Spinach and Strawberry Salad

Great! Stuck to recipe, except I drizzled the dressing on instead of tossing with the salad. The dressing is very tangy, which compliments the sweetness of the strawberries. A wonderful mixture of flavors; even my 4-year-old gobbled it up! Plus, it was very quick, took less than 10 minutes to throw everything together.

Seasoned Potato Fries

Used Pinzey's Pasta Sprinkle instead of Italian seasoning, and no salt. Tons of flavor, very delicious. Fries were perfect texture too, not too greasy, not too crunchy. Served with ketchup, we gobbled these up!

Chococonut Chip Cookies

Mmmmm.. added 2 tablespoons butter to the recipe, and used milk choc chips (didn't have full 2 cups, so only used about 1 1/2 cups). Still, these were delicious! Not overwhelmingly coconut flavored, so if you're in for that, I'd suggest adding another 1/2 to 1 cup. The batter spread out as it baked to make very chewy, delicious cookies. You may want to chill before baking if you'd like your cookies to maintain their shape. The coconut adds a sweet & unique taste & texture. The coconut flavor really comes out after they've cooled.

Spaghetti Carbonara II

What a great comfort food. I've never tried making or even tried spaghetti carbonara before this. Recipe was easy to follow, I used White Zinfandel for the wine and added 2 handfuls of frozen peas at the final step (when adding the bacon & pasta back into the pan). Delicious combination of flavors, my usually picky 4 year old wanted 2nds and 3rds on this!

Coconut Macaroons

Very chewy and light texture. This was a very easy and simple recipe and had delicious results. I used a little more than what recipe called for when scooping onto cookie sheet as 1 tsp. seemed too small (about 1 tablespoon). Came out the perfect size. Also dipped in milk chocolate, using those Baker's melting containers in the baking aisle. Almost tastes like an Almond Joy, minus the almond and with much better texture!

Pumpkin Pie Bread

This bread was very good, moist, and with good flavor when a few exceptions were made. I followed one reviewer's suggestion to halve the recipe, but still add the full 15 oz can of pumpkin. I also added the full amount of pumpkin pie spice. The title is a bit misleading, as I didn't really think this tasted different than your standard pumpkin bread- but it was still delicious as that.

Ultimate Frozen Strawberry Margarita

These are great! I like that the frozen strawberries added a real fruit taste, but the syrup made them sweet too. Not sugary like the frozen mixes you get at the store, delicious more like the ones you order at a good restaurant.

Lemon Rosemary Salmon

Very moist & flavorful. I made as stated, but wrapped everything in a foil packet as another reviewer had suggested. Cooking time took about 20 minutes longer, but my salmon was not quite thawed yet so it might have affected cooking time. Will make again!

Chicken Fajita Pizza

Very good. Maybe it's just my oven, but cook time should be much shorter- after 5 minutes in the 425 degree oven the crust was browned, and when toppings were added, only needed 1-2 minutes to melt the cheese. Substituted garlic powder (1 tsp.) for the clove, and added corn meal to the bottom of the crust as another reviewer suggested. We served topped with lettuce & tomatoes. Very delicious, and a quick weeknight meal. Only recommendation I have is to use a thicker crust or make your own as it has to hold these heavier toppings- the store bought one didn't really cut it.

Bacon Wrapped Barbeque Shrimp

This was good, but a bit bland. I guess I was hoping for more barbeque flavor because of the title. I used regular sized cocktail shrimp (cooked and flash-frozen), and turkey bacon. I pre-cooked the bacon as recommended, and thawed the cocktail shrimp, then wrapped two shrimps in one piece of bacon. It only needed to bake in the oven for 5 minutes. I would like to try this with a marinade or barbeque sauce and see if that helps the flavor. However, they still tasted good.
