Zesty Slow Cooker Chicken Barbecue

This is as good (if not better) than my favorite BBQ restaurant shredded chicken. Took another reviewer's advice and slow-cooked in chicken broth for 4 hours, then drained and added all sauce ingredients (after shredding) and turned out perfect. Thanks for the recipe!

Baby Back Ribs

I had too many ribs to fit in my slow cooker so I made this along with the Slow Cooker Barbecue Ribs recipe from this site. I used rib rub and marinated in Stubb's barbecue sauce the night before, and removed the membrane. I also cooked in 225 degree oven for 4 hours like other reviewers suggested. However, the slow cooker ribs were far superior, and despite my efforts to baste the ribs in sauce every so often, these were still not as tender and moist as I like. I have prepared ribs in the past by boiling and then baking, maybe boiling these in water before putting in the oven would produce better results? Anyway, I will stick with the slow cooker method from now on.

Eggplant Parmesan II

Superb. I salted the eggplant for 20 minutes and then rinsed with cold water as other reviewers suggested. I used a home-made marinara sauce (from Giada De Laurentiis' Everyday Italian- try it!) and only needed one eggplant to fill an entire 9 X 13 pan. This is better than the restaurant versions I've had. Also used Penzey's pasta sprinkle to season.

Slow-Cooker Barbecue Ribs

As other reviewers suggested, I used 2 cups BBQ sauce and 1 cup ketchup instead of the 2 cups ketchup/1 cup chili sauce. I also used a rib rub before putting these in the oven. Otherwise, made exactly as recipe stated and these came out perfect and tender. They were falling off the bones. The first step of putting them in a 400 degree oven browned them just enough so they came out a good, caramelized brown color after 8 hours in the slow cooker. Delicious!

Sweet Restaurant Slaw

I have tried the Restaurant Style Coleslaw 1 on this website and prefer this recipe much more. It tasted excellent made exactly as is. Not too much dressing and not too little, and it was just the combination of sweetness and tanginess I was looking for.

Summer Beer II

This is a very refreshing drink with just a bit of tartness from the lemonade. It's one of those mixed drinks where you don't taste the alcohol, so don't worry about mixing vodka & beer. We served this to dinner guests and they loved it too- highly recommended!

Playgroup Granola Bars

These are excellent. I omitted the oil and added 1 mashed up banana + 1/4 cup peanut butter, as well as added chocolate chips with the raisins. These taste great and were so easy to make. I didn't have the problem of them crumbling apart like other reviewers, they are a very good chewy texture (maybe b/c of the peanut butter & banana?).

Chinese Napa Cabbage Salad

This was mediocre. The sesame oil flavor seemed to dominate the whole dish, which was not very appetizing. I used a bag of cole slaw mix instead of the cabbage as another reviewer suggested and added sunflower seeds instead of the almonds. I would cut way back on the sesame oil (maybe only add a tsp. or so) and add chopped pears to this if I made it again. I think the fruit would compliment the strong flavor of the dressing.

Corn Dog Muffins

This was quick and easy to make and quite the kid-pleaser. I used cornbread muffin mix instead of bread. The cornbread muffins were just sweet enough. Omitted the cheese and still tasted great. I would like to try making these in mini-muffin pans in the future with slices of hot dogs as an appetizer.

Banana Milk Drink

I'm not a huge banana fan, but this was soo creamy and delicious! Sure, it is a little 'warm' for a smoothie-type drink, but that didn't really bother me. The cinnamon on top is a must. Try this, you won't be sorry!

Ice Pops

This tasted like the traditional ice pops you get at the grocery store. I used 4 of those individual fruit punch KoolAid packets (the ones that you are supposed to throw in your water bottle) and omitted the sugar (they already have it). Also, used sugar-free strawberry Jello. Very good for cooling off on a hot day. Note: recipe made 12, not 6 popsicles.

Quick and Easy Pizza Crust

This will be our go-to recipe for pizza crust from now on, replacing store-bought frozen and home-made recipes. I was attracted to this recipe because I've had many failures with pizza crust before- this was quick, easy, AND delicious! Added Penzey's pasta sprinkle to the mix but otherwise made as is. For those who like to buy the jars of yeast (instead of the packets), use 2 1/4 tsp. Yumm!

Best Guacamole

Excellent base recipe. Other reviewers have made great suggestions, adding garlic, cilantro, chopped tomatoes and the like. I personally made the recipe as is, omitting the olive oil and adding 2 tblspns of salsa. Just mashed everything together with a fork for a quick snack, delicious!

Chicken Salad Wraps

Very quick & simple, a good lunch. Made as is except used Miracle Whip Lite instead of Mayo. Tasted great, next time I might cook a piece of chicken in the slow cooker with chicken broth and shred instead of using canned.

BBQ Chicken Calzones

I did not like this recipe. Although edible, it really ended up tasting like bread with BBQ sauce on it. I couldn't taste the onions and chicken at all, despite adding more onions than recommended. I did not use bacon in this recipe, and added dried instead of fresh cilantro. Used with Jay's Signature pizza crust recipe from this site. Will not make again. I do have a suggestion for cooking the chicken (I've done this before when I made regular BBQ chicken pizzas and it turned out well)- cook your chicken in the slow cooker all day with a can of chicken stock, and then shred it when you're ready to cook your pizza- that really brings out the chicken flavor.

Restaurant-Style Coleslaw I

Not too bad, however, not what I was looking for. I like a slight 'tang' to my coleslaw dressing (and am used to getting this in restaurants), but this had too much. It was very creamy though. I will make again, but reduce the lemon juice and vinegar next time. When you first pour the dressing on, it seems like there's not enough, but after it chills for an hour, it develops into that creamy consistency you're used to.

Slow-Cooker Pepper Steak

Very good. I used a different (cheaper) cut of sirloin, but can't remember which. Made recipe as is, adding one small clove minced garlic & green peppers at last 2 hours per others' recommendations. Very savory and the slow cooking makes the meat very tender. Next time I'd add an additional clove of garlic. Delicious, thick gravy- the onions and tomatoes practically disappear into it!

Easy Strawberry Lemonade

Made with pink lemonade. Wonderful summer drink, so refreshing. Might want to "mush" your strawberries a bit as you add them, as this will extract more flavor. VERY easy to make!

The Best Rolled Sugar Cookies

These were perfect for iced sugar cookies. I did not have the ingredients to make icing, so baked them plain. They were good, but not as sweet as I'd like, but perfect for icing (because sweet cookies + icing= TOO sweet). Made recipe as is. Dough was delicious and they were perfect for rolling out and cutting with cookie cutters.
