Took the advice from other reviewers and turned halfway through baking. My only problem was that the combination and amount of seasoning (and I love highly seasoned foods) was a little too much on my stomach. They were good but gave my husband and I both horrible indigestion.

Pizza Casserole

Great dish, and very easy to make! The only thing I would change for next time would be to add more sauce, other than that is was delicious. I used turkey pepperoni and added a couple dashes of Italian seasoning. Yum!

Easy Mint Chocolate Chip Ice Cream

Amazing, better than store bought! I will cut down the amount of chocolate chips next time though. The only downside is that it melts really fast, but you'll be eating it quickly anyway because it's so good! I also cut the salt down to 1/4 tsp. Made the same recipe again but with only vanilla extract and crushed oreos. It was to die for!

Sour Cream and Chive Mashed Potatoes

I love homemade mashed potatoes, and this is a great easy to make, from scratch recipe. I used russet potatoes instead but yukon would have probably tasted best. I added a little butter as well, just because, butter makes everything better. Fast, easy and yummy!

Spinach Lentil Soup

Very hearty and healthy! I was concerned about the seasoning flavor but the kielbasa and broth had just the right amount of salt to flavor the whole dish. I used a whole package of kielbasa, 4 oz. was not enough. Also used brown rice and just threw that in with everything else instead of cooking it separately. Turned out fine that way. Tastes even better the next day!

Blueberry Zucchini Bread

This was the most delicious homemade bread EVER! I kept everything the same except I substituted half the oil for applesauce and used canola oil for the other half rather than vegetable oil. Also used half unbleached flour, half whole wheat flour. So incredibly moist! I had enough mix to fill five mini loaf pans and didn't need to cook any longer than instructed, they were perfect. Best right out of the oven with some butter, YUM!

Cuban Ropa Vieja

This turned out very well and smelled wonderful while it was cooking! I did as some other reviewers suggested and increased the amount of tomato sauce (I like things saucy) and garlic. It's a simple dish with a lot of flavor, goes great with rice and black beans.

Morning Glory Muffins I

These were sooo good! It's especially nice that it's full of lots of good things for you. In place of the oil I used applesauce, with the 1/2 c. spiced apple butter. Great flavor and texture, moist and filling. I mixed in the walnuts and left out the wheat germ. Next time I may either use all applesauce (no apple butter) or cut down the sugar a bit since they're a tad sweet for my taste. Will be making this again for sure!

Broiled Tilapia Parmesan

This was so so so good! Made this for a small group of people and they all loved it. As others suggested, I cut back to 2 tbsp. of mayo and I think that was perfect. Next time I may even cut back more and also lessen the amount of butter to cut back on calories. Be careful not to overcook the fish, it can be really easy to do that if you're broiling. My husband is requesting that this be a regular weekly dish in our household, he gobbled it up in a matter of seconds!

Annie's Fruit Salsa and Cinnamon Chips

Delish, but I make make some adjustments next time around...just to suit my own personal preferences. But for a crowd, this recipe would be a hit! I added blueberries to the mix and used 2 tbsp. preserves rather than 3 tbsp. Next time I will either cut it back to 1 tbsp. or cut back the sugar/brown sugar. It was VERY sweet, but still tasty nonetheless. The chips rocked! This is a great idea for a party/get-together.

Pineapple Upside-Down Cake VII

Definitely a crowd pleaser! I made this in a 13x9 pan instead of a skillet and it turned out great. Used butter cake mix in place of the white cake mix, with the pineapple juice instead of water and YUM! A little sweet for my taste so I may cut down on the amount of sugar/butter the next time I make it, but that's just a personal preference.

Homemade Black Bean Veggie Burgers

These are delish! I will however, do things a little differently the next time I make them. A quick pulse or two is all you'll need in the food processor. I went a little too long and has onions & peppers that were practically pureed. I had to squeeze the extra water out of them and it got pretty messy. The flavor was great, I think adding some corn would take it over the top! Be sure to freeze right after making them so they hold their shape, they tend to fall apart while cooking so it's easier to cook them frozen. Definitely a keeper!

Caramel Popcorn

This is such a hit! I make this for a holiday treat exchange I attend each year and everyone raves about it. I recommend using air popped popcorn rather than the microwave kind, it just tastes better. This will get eaten up fast!

Cake Balls

I made these with red velvet cake with cream cheese icing. The cake balls themselves were tasty, but trying to get the chocolate onto them was a complete nightmare. 3 oz. is nowhere near enough to cover 36 of these...it covered about 4 of them. I may just not melting the chocolate to the right consistency but it was just a big mess. Will not do this again.

Fresh Rhubarb Pie

This pie was AMAZING! As other reviewers suggested, could have done without the extra butter if you're trying to cut down on fat. I made this with a blend of rhubarb and strawberries so I didn't need as much of the sugar/flour mix since the berries added a lot of sweetness. My husband was drooling over this...he ate 3/4 of the pie in just 2 days. This recipe is a definite keeper!!

Honey Roasted Red Potatoes

Not rating it 5 stars only because this recipe could have doubled on the amount of sauce. I doubled the recipe but should have made more of the sauce so the potatoes would have had more flavor. But what a flavor it was! Perfect balance of ingredients, and great taste.
