Coffee Butter Frosting

Reviewed: Feb. 10, 2009
This frosting was good although it was a little bit too sweet for my taste. I used 1/2 cup less sugar than called for and the next time that I make it I will use even less. I think I might add a little more coffee too. All in all a good recipe. Thanks!

I followed the suggestion of another reviewer and sustituted 1/2 of the velveeta for sharp cheddar. I also added 1 grated carrot. Great recipe!

Pumpkin Spice Cupcakes

Reviewed: Nov. 24, 2009
These cupcakes are delicious. I made them for Thanksgiving and topped them with cream cheese frosting. The only change I made was to add an additional cup of pumpkin puree. They came out very moist!!! Oh and I did not have ground cloves but they were still really good!

Waffles I

Reviewed: Aug. 8, 2009
This recipe yielded a nice light fluffy waffle. I whipped the egg whites separately and folded them into the batter as some other reviewers suggested. I also added a handful of fresh blueberries to the batter. Thanks for a good recipe!

Dinah's Baked Scallops

Reviewed: Mar. 4, 2009
This was a good recipe however if you make it do yourself a favor and absolutely do not use all of the liquid called for in the recipe. I'm glad I read the reviews before making this. I used only @ 1/3 of the liquid and it still was a little too much. Too much liquid= soggy mess. It still came out good but I know it would have been better with a tad less liquid. I also broiled the scallops for the last few minutes- another step I would not skip. All in all a good recipe with some minor changes.

Good Old Fashioned Pancakes

Reviewed: Mar. 4, 2009
Great recipe for pancakes. Much to my husband's disappointment I now have the best recipe for pancakes. His recipe was really good but we both have to admit this one is better.

Stuffed Pork Chops III

Reviewed: Mar. 4, 2009
These were so so so good! I will definitely be making them again. My husband loved them! I followed the recipe exactly as written. The only change I made was to add some flour in the end to thicken the sauce. I made mashed potatoes and broccoli to go with this. Delicious!

Caramel Apple Pork Chops

Reviewed: Feb. 6, 2009
These pork chops were really good. I was looking for something different to do with pork when I found this recipe. I took the advice of some other reviewers and marinated the pork for a few hours in apple juice and soy sauce (2:1). After sauteeing the pork and making the sauce I baked the whole thing in the oven (350 degrees) for @30 minutes. This was helpful as it gave me time to make the side dishes. Oh and I would also strongly recommend at least doubling the sauce. I doubled it and it was the perfect amount for 2 people. Thanks for a great recipe! I will be making this again!

Baked Chicken Nuggets

Reviewed: Feb. 4, 2009
This was a really good easy recipe. My 23 month old daughter even liked these and she is very picky. The only thing I did differently was to use an egg instead of the butter. Thanks for a quick weeknight recipe!
