Corned Beef and Cabbage I

Followed other reviewers suggestions and added 1 can of beer, 3 cloves of fresh minced garlic and a tsp of whole peppercorns. Also made a sauce using sour cream, horseradish and a dash of lemon juice. Fantastic St. Patrick's Day meal!

Dinah's Baked Scallops

This was a good recipe however if you make it do yourself a favor and absolutely do not use all of the liquid called for in the recipe. I'm glad I read the reviews before making this. I used only @ 1/3 of the liquid and it still was a little too much. Too much liquid= soggy mess. It still came out good but I know it would have been better with a tad less liquid. I also broiled the scallops for the last few minutes- another step I would not skip. All in all a good recipe with some minor changes.

Aunt Norma's Rhubarb Muffins

Great muffins! I was looking for a way to use up some extra rhubarb I had in the fridge. I had already made a pie and was looking to make something different. I followed the instructions exactly as written and these muffins were delicious. Will definitely make again!

Sauteed Swiss Chard with Parmesan Cheese

I have never made swiss chard before and am so glad I decided to try this recipe. It was excellent! I made it as a side to baked cod and brown rice. I will definitely be making this again! Great recipe!

Caramel Apple Pork Chops

These pork chops were really good. I was looking for something different to do with pork when I found this recipe. I took the advice of some other reviewers and marinated the pork for a few hours in apple juice and soy sauce (2:1). After sauteeing the pork and making the sauce I baked the whole thing in the oven (350 degrees) for @30 minutes. This was helpful as it gave me time to make the side dishes. Oh and I would also strongly recommend at least doubling the sauce. I doubled it and it was the perfect amount for 2 people. Thanks for a great recipe! I will be making this again!

Best Chocolate Chip Cookies

This was not a bad recipe for chocolate chip cookies however they were more cake-like than I care for. I like a chewier cookie. That is just my personal taste though. If you like a cakey cookie then this is the recipe for you.

Chicken Tortellini Soup

This recipe is definitely a keeper. I used chicken that was leftover from the night before and a can of diced tomatoes instead of stewed tomatoes. It was delicious and filling. My husband loved it. I will be making this again!

Slow Cooker Cranberry Roast

I will not be making this recipe again. The meat came out very dry and the sauce was just too sweet. It is a very simple recipe so I thought I would give it a try but was very disappointed with the results.
