Bacon-Wrapped Salmon

Reviewed: Aug. 29, 2014
This recipe couldn't be easier. I love salmon, I love bacon, and I hate any recipes that are labor intensive (a.k.a. easy for me to mess up). I followed the recipe to a T and it came out great. Even my chef husband loved it. What they say is true; bacon DOES make everything better.

Low Carb Zucchini Fries

Reviewed: Feb. 11, 2014
Loved this recipe. I am usually disappointed by all the "faux french fry" recipes used with veggies since they either come out too soggy, or bland, or just not as expected. This recipe however is great. I followed the directions exactly as they are listed here. I was able to use my food processor to grind the almonds so I just threw in the Parmesan with the almonds to make my life easier. The zucchini drained nicely, I patted it dry to help get rid of excess moisture. I breaded the slices and baked as directed and they came out delicious and pretty crispy, not soggy or bland, just perfect.

Biscotti

Reviewed: Dec. 23, 2013
I've never made biscotti before so I was initially concerned that it may be a little difficult but wow, this recipe couldn't have been easier. I followed the instructions exactly as they are listed here (using the anise extract rather than the oil) and they came out great. Initially the dough was very very sticky so I refrigerated it for a bit before putting it on the sheet tray and that worked just fine. After they cooled a bit I cut them, toasted them off a bit more per the instructions and dipped half in chocolate and white chocolate, delicious!

Asian Ginger Dressing

Reviewed: Aug. 1, 2013
I made this recipe as is and loved it. It's got the perfect soy, sweet, gingery taste that I was looking for. I use it frequently on Asian salads with things like mandarin oranges, edamame, etc. I read that someone swapped the olive oil for sesame so next time I will try that but as is, I think the recipe is great.

All-Star Veggie Burger

Reviewed: Jul. 3, 2012
Very good veggie burger, though I think I under-seasoned mine (needed more salt). I followed the recipe mostly to the T, but I did not have oat bran and I used Hoisin sauce instead of Korean BBQ..not sure how much of a difference that would have made but it still came out good. I also added a little egg white to the mix to bind it otherwise I could see that it was going to fall apart. I threw in some sunflower seeds after I mixed everything together in a food processor, I wanted to add a little nuttiness to the taste and had those lying around in the pantry. All in all a good recipe and I'd make it again.

Flounder with Shrimp Sauce

Reviewed: Jun. 12, 2012
Very good recipe. Has a nice taste to it, not too heavy or overpowering-just right. I followed this recipe exactly except for 2 modifications: I used almond milk instead of regular, because that's all I had, and I used spicy mustard instead of dijon since I didn't have the dijon. This still came out great. I added a little garlic powder on the fish before I cooked it just to add a little more flavor. I'll definitely be making this again, it was so easy to do!

Good Old Fashioned Pancakes

Reviewed: Nov. 26, 2011
I had the urge to make pancakes this morning and I've honestly never made them from scratch before. Usually I reach for my trusty box of pancake mix but this time I was out so I came here to look up recipes. I came across this one as being one of the highest rated ones so I figured I'd give it a shot. The recipe is extremely easy, and very tasty. Even my chef husband enjoyed them. I'll definitely be making them again!

Delicious Egg Salad for Sandwiches

Reviewed: May 4, 2011
Great recipe for egg salad. I got a craving for egg salad one day since the tea house I go to has these great mini egg salad sandwiches that I love so much. I was looking for a recipe that would match and this one pretty much did the trick! I left out the onion though b/c I am not a fan. I actually *forgot* to add the paprika which I'm bummed about because I think it would be a great touch. I will add that next time for sure. Otherwise-great recipe, very tasty! I will make this again.

Eggplant Parmesan II

Reviewed: Aug. 10, 2010
Excellent! I've tried a few other Eggplant Parm recipes on this site, but this was by far the best. The only thing I did differently was I sweat the Eggplant prior to breading/baking it. I sliced my eggplant very very thin, followed the rest of the directions and the end result was DELICIOUS. From now on this is the only recipe I will use for Eggplant Parm.

Easy Alfredo Sauce I

Reviewed: May 17, 2010
Very good, simple recipe that took little to no time to prepare at all. I made some substitutions for a lighter version though. Instead of heavy cream I used light and instead of butter I used light margarine. Both worked just fine. I used grated parmesan (regular) and that was all this recipe needed. To my taste, I added a little bit of black pepper to the sauce once it was complete. I served this with crab meat and whole wheat pasta. It reminded me of the crab alfredo dish at Red Lobster, yum! The sauce was great, and I would definitely make it again.

Easy Seafood Fettucini

Reviewed: Apr. 28, 2010
Good, easy to follow recipe. I added some Parmesan cheese to the sauce which added a nice flavor to it, but besides that I followed the recipe as stated and it came out well. I used imitation crab meat which tended to soak up the liquid in the sauce and become a bit soggy so I suggest using real crab meat if you have it on hand. All in all I would make this again.

Best Brownies

Reviewed: Apr. 28, 2010
I don't know why I was skeptical about these brownies, but I was definitely proven wrong. I followed the directions to a T and did NOT use a mixer-I hand mixed instead as per one of the suggestions here. The brownies came out fudgy (which I prefer over cake-like). I made sure not to overcook and they were perfect. Very easy and good recipe!

Cake Mixes from Scratch and Variations

Reviewed: Apr. 12, 2010
I'll never buy a boxed mix again! No reason to! This recipe is super easy and super delicious. I used these for cupcakes and they came out soft, light and moist. The were the perfect consistency and taste. I tried just the vanilla cake mix, the next time I'll try the variations. Very pleased with this recipe.

Eggplant Parmesan I

Reviewed: Mar. 10, 2010
Very good recipe. The only thing I did differently was to bread the eggplant slices, and I put a little extra shredded mozzarella on the top. This was my first attempt at eggplant parmesan, and I would definitely make it again.

Chicken Breasts with Balsamic Vinegar and Garlic

Reviewed: Feb. 5, 2010
I can't say enough great things about this recipe. First off, I'm way more of a baker than a cook...and most of the dinners that I make that don't already come in a box end up coming out pretty poor..I'm fully ready to admit that. Now that that's out in the open, this recipe was SUPER easy to follow. I followed it to a T except I subbed rosemary for thyme. Every step went off without a hitch and by the time I was done, I was super proud of myself, it looked and smelled great...but I had that one burning question left...did it taste good? The answer is YES, it was delicious! On par with something my husband might make, and he's a chef! I highly recommend this recipe to anyone, but especially to the fumbling cook such as myself ;) If you're a novice cook and need to make a dinner for guests-I'd say this is your #1 fool-proof guest pleaser! Also great for any occasion though.

Peanut Blossoms II

wow...GREAT recipe. I followed the directions to a T and they came out wonderfully! I love how cute they look, by far the most professional-looking cookie I've made, not to mention delicious too. I'll be gifting these for the holidays and saving some for myself too :)

Tangy Shrimp and Scallops

Reviewed: Dec. 10, 2009
Loved this! So easy and so flavorful! I didn't have Worcestershire sauce on hand so I substituted soy sauce and it was still great! I grilled these on my George Foreman grill because it's just too cold to grill outdoors and they honestly came out great. I can't wait to try this on the real grill when the grilling season hits!

Aunt Bev's Famous Apple Pie

Reviewed: Nov. 5, 2009
Delish! I followed the recipe to a T. This was my first attempt at a pie ever so, I had a bit of trouble rolling out the pie crust (I had to buy boxed pie crust mix b/c I couldn't find already made shells go figure). Anyways despite my crust not looking so perfect the pie tasted awesome! This is a great, simple good old standby that I will definitely make again. I found already rolled pie crust at the supermarket the other day too go figure! Next time I will use that :) Thanks Aunt Bev! ;)

Lemon Soup

Reviewed: Sep. 24, 2009
Very good quick alternative to avgolemono soup (greek lemon soup) which normally takes much longer than this. This was quick, easy and tasty. Next time I will probably add bits of carrots or maybe pieces of chicken but this was a great quick fix for me tonight since tomorrow is food shopping day and the pantry is a bit empty!

Steff's Shepherd Pie

Reviewed: Aug. 12, 2009
Very good, easy recipe that even I can make haha. I did make some changes though. Instead of ground beef I used ground turkey, instead of cheddar cheese I used 2% american cheese, and I also used red potatoes for the mash and mixed veggies. It still came out great and I would make this again definitely.
