I added 1/3 cup carrots and sauted the onions, celery & carrots with 1 clove minced garlic, until tender. I decided to try a slow cooker on this. So I added the potatoes, sauted mixture, ham, water, chx bouillion, salt & pepper. I let this cook for 4 hours on low. Then added roux. Cooked 2 hours. Since it was a little thin I did another batch of roux but only used 1/2 and added it to crock. Cooked 1 hour. Potatoes were perfect. They weren't at all mushy & the flavor was fantastic. I made 4 soups for my office and this was done way before the others. I will use this over and over again. I served with bacon bits.
