Crustless Spinach Quiche

A wonderful base for any kind of crustless quiche. I substituted the spinach for blanched broccoli; I also threw in some mushrooms with the onions.

Chicken Breasts in Caper Cream Sauce

Great recipe! The fiance approved and asked it to be added to the dinner rotation. After reading comments I doubled the sauce. Also, I baked the chicken after browning it on the stove.

Slow Cooker French Onion Soup

This is a great recipe. I couldn't find Emmental so I subbed in Swiss. If you put the bread right in the soup it kind of soaks it up and turns soggy so you can coop that right up with your spoon along with the soup - or, if you don't like soggy bread you can not do that. The bread is definitely key, though.

Salisbury Steak

Good recipe. After reading reviews, I added some dry onion soup mix to the beef, and doubled the sauce minus the ketchup; also, I didn't have any dried mustard so substituted some Dijon mustard in there. I browned the steak patties (they stayed together pretty well for me) and then put them in a foil covered casserole dish and poured the sauce/gravy over it. Covered and baked at 375 degrees F for about half an hour or so. Good and moist, but again, the patties keep together really well.

Mom's Zucchini Bread

First time making zucchini bread. This was simple and perfect. Made it as is minus the walnuts. I would like to try it with the white sugar halved with brown sugar substituted for the other half, as another commenter mentioned.

Excellent. I had to omit the tarragon because I didn't have any. And I browned the chicken before cooking in the oven because I always do, but otherwise followed exactly. This is like chicken cordon bleu minus the sauce.

Spinach Quiche

First time making quiche - it was so easy and great! I had one problem, which was that I could only find pie crusts that were for pies, and the plainest one I found was a vanilla wafer one. So the quiche uh, had an unexpected sweet undertone, which was not bad! I'm sure it's better with a plainer crust but if you're ever in a pinch or are looking to try something different, vanilla wafer pie crust is not too bad at all.

Slow Cooker Chicken Taco Soup

Good, but not great for some reason. The boyfriend agreed. I might try this again with a more traditional Alfredo sauce - Parmesan cheese, butter, parsley, heavy cream, and garlic; no milk, flour, or chicken broth.
