Creamy Saffron Shrimp with Gnocchi and Caramelized Onion

Unbelievably good sauce! Substituted chili powder for saffron and left out mushrooms (didn't have any). Still awesome!!

Amish Slaw

Great! My husband said it was the best coleslaw he's ever had and I would agree. It took only minutes to make with a bag of pre-cut coleslaw mix with carrots. I used red wine vinegar and olive oil. Can't wait to try it after a day. Thanks!

Black Bean and Salsa Soup

Love this! Healthy, easy, and vegetarian. I used some leftover fresh salsa and it was amazing! Also added sauteed onion, cayenne pepper, chili powder, lime juice, and a little extra cumin as suggested by others. YUM!!

Amazing Spicy Grilled Shrimp

Wonderful! Easy and delicious. Added red pepper flakes and used cilantro instead of parsley. It's winter, so I marinated for 10 mins, then dumped the marinade in as sauce and sauteed for a few mins with red and green peppers and snow peas. Pour over rice. Great!

This IS amazing! I've made this recipe in large batches numerous times now. It holds up perfectly to freezing, and is a great make-ahead, healthy meal ready-to-go!

Ultimate Potato Soup

Wonderful soup! I added cornstarch, more potatoes, and used less milk/half-and-half. I also left skins on the diced potatoes and just mashed them a little in the pan before serving--instead of pureeing. It turned out perfect--thick, chunky, and delicious! We topped it with cheese, sour cream, bacon bits, and sliced green onions, and served it with a warm baguette piece. The green onions really added a lot to the final flavor, I think. Yum. Make this recipe!!

Broiled Tilapia Parmesan

This is the BEST fish I EVER ate!!! I made it as suggested but with Old Bay Seasoning while broiling, light mayo, and light butter. Each piece is only about 3 points on Weight Watchers!! AMAZING. Thanks for the great recipe!

Authentic and Easy Shrimp Curry

This turned out well, but not great--probably because I had to make some adjustments. I used curry powder instead of curry leaves and tumeric. And I didn't have garam masala or coriander powder. But it still turned out as a nice spicy dish, just missing something--I'm sure these ingredients would make a difference. I am going to find a better spice selection somewhere and try it again. Nice and healthy!

Delicious Black Bean Burritos

I just made this recipe for the second time--delicious again! This time I made some adjustments, calculated the weight watchers points, and froze a batch of 10 for lunches. In this version, I made the following changes: I doubled the veggies (2 onions, 1 red pepper, a lot of cilantro), added a can of diced tomatoes with chiles, included 1- 19oz and 1- 15oz can of black beans, and 6 oz 1/3 less fat cream cheese--along with the other ingredients. Scooped into 2 point tortillas, this recipe made 10 4-point burritos ready to freeze. Healthy and delicious! UPDATE: These defrosted great!!

Suki's Spinach and Feta Pasta

Great dish! Very flavorful. I added Kalamata olives, as suggested by others, and a full bag of fresh spinch and it was great. There are only two of us, so we have plenty of leftovers for today--and we're happy to eat it! Delicious.
