Leek, Bacon, and Pasta

This is a very forgiving recipe. I did not have mushrooms so substituted some frozen peas. I only had microwave bacon so sauteed the leeks in olive oil instead. And I only had low fat sour cream. Still it was awesome! Family loved it. I might try throwing in some diced chicken next time, cooking it with the leeks.

Spinach and Feta Pita Bake

Not sure what the problem was here but I did not care for this much. My husband said it was "alright" so that's why the 3 stars instead of 2. I followed the recipe EXACTLY, not changing a thing. Found it rather bland which surprised me with such strong flavors as the pesto and feta. Maybe my sun dried tomato pesto was poor quality. I might fiddle with it and try again.

Italian Anisette Cookies

These taste just like the ones my grandmother and aunt always made. Delicious. Perfect amount of anise in the cookies but I did cut down on it a bit for the icing. Thanks for the recipe!!

Mom's Zucchini Bread

I've been making this zucchini bread for years and can't believe I never reviewed it. Although with thousands of reviews, what's one more? This recipe is awesome! My kids LOVE it. I mean their faces light up when I tell them I made some! Great way to get some zucchini into them! I did not change anything except leaving out the walnuts as we don't like nuts in our food. I give mini loaves out at Christmas time too and they're a big hit. I saw something in another review about draining the zucchini. I've never done that and never had any problem....makes it nice and moist!

Day Before Mashed Potatoes

This one got mixed reviews. At the suggestion of other reviewers I used the chive cream cheese but everything else the same. Some people loved it, others weren't that impressed and would have preferred it without the cream cheese. Might try it with the plain cream cheese next time. I put it all together the night before but did not bake it. Again took the suggestion of others and put it all in a crock pot the next day for about 3 hours and then on "warm" till we were ready to sit down. That worked out great and did not tie up my oven which was needed for other things.

Yellow Squash Casserole

I wanted to use this recipe for Thanksgiving so made it a few days ahead to try it out first and see if we liked it. We found it good but too salty for our taste. The crackers have salt, the cheese is salty, so I omitted the added tsp. of salt when I made it for Thanksgiving. Came out good and most people liked it. Overall pretty good.

Perfect Turkey

Wow! Easily the best turkey I've ever made. I had a 24.5 lb turkey so was really worried about the breast meat being dry since I knew I'd never be able to flip a bird that big. I cooked it breast side up the whole way. It was as moist, juicy and flavorful as you could want. Really didn't change anything else. I have used other brine recipes in the past, which had more flavorings in them but for whatever reason, this simpler one is the BEST by far. Oh, and my bird did not have a pop up timer and I ended up putting my regular meat thermometer in a bit late. It read 184 degrees in the thigh meat and I was so worried I had ruined it. Most guides say 165 degrees. But as I said, it was awesome! Thanks for a great recipe!

Mediterranean Quinoa Salad

YUM! I've been searching for a quinoa recipe I liked and this is it! Made it mostly as written except did not use chicken (didn't have any on hand) and used a red pepper instead of green. Will try it with the chicken next time. Thanks for a great recipe!

Dijon-Tarragon Cream Chicken

YUM!! I admit I'm not actually rating the original recipe since I took the recommendations of many other reviewers. That said, I coated the chicken with Dijon (tho didn't have time to let it "marinate"), then coated with seasoned flour. After browning, I deglazed the pan with a bit of white wine, then sauteed 1/2 onion (I think I would use a little less next time) and 1 garlic clove. Once they were cooked I added the Dijon mustard, fresh tarragon and the cream (I used half and half and it thickened and tasted just fine). I might double the sauce next time. My husband couldn't stop saying "this is GOOD" over and over as he was eating. My picky teenager loved it too. Will definitely make again.

This was a big hit. I usually use the boxed rice pilaf but had run out and didn't feel like going to the grocery store. I found this recipe, didn't change a thing and it came out great. No more boxed stuff at my house!

Healthy Garden Salad

OMG is this ever amazing!! The only change I made was subbing olive oil for the grapeseed as I did not have any, and I reduced it to 2 Tbls. just to save a wee bit on fat. I tried it without waiting for it to chill the 2 hours so if it's this good now, I can't wait to try it later! And I think it's the prettiest salad ever. Thank-you for an awesome recipe!!

Apple Pie by Grandma Ople

As if it needs any more great reviews....but this was AWESOME. Took some other reviewers' advice and added cinnamon and nutmeg to the sauce, mixed 3/4 of it with apples first, then poured the rest over the top of the lattice. Also baked at 350 the whole time as well. Made it for my husband's birthday (he prefers pie to cake) and it was a huge hit. My "go to" apple pie recipe from now on!

Rosemary Ranch Chicken Kabobs

These were very, very good. I gave 4 stars instead of 5 because we found the rosemary a bit overpowering. Next time I'll reduce that a little. And since it's December in New England, instead of grilling, I baked these in the oven since others had had success with that. It worked out fine. I used chicken tenders which also worked out great and baked for about 18 minutes at 350 degrees. I would use those again if making kabobs and just thread them onto the skewers. I hate cutting up chicken!!

Chicken Breasts Pierre

This was delicious! Family loved it. I did not have celery seed or hot pepper sauce on hand so left those out. Still fantastic. Only other change was taking others advice and subbing chicken broth for the water. Mine came out a wee bit chewy but I think it overcooked. I cooked for 35 minutes but will check for doneness at 25-30 minutes next time. Definitely going into my dinner rotation.

Cocktail Meatballs I

This rating is just for the sauce. I was lazy and bought frozen cocktail meatballs! The sauce was so simple yet so yummy. Got many compliments on it and MANY raised eyebrows when I told people what was in the sauce! I quadrupled the sauce recipe for a party and used 1 1/2 bags of frozen meatballs (containing about 96 meatballs) and it all fit perfectly in my crockpot.

Bacon and Cheddar Stuffed Mushrooms

Served these at a recent party and they were devoured. To save time, I used a food processor to chop up the stems (I was tripling the recipe) and also used real bacon bits instead of cooking and crumbling bacon. Turned out great!

Warm Crab Parmesan Dip
