Eggplant with Garlic Sauce

What the heck did I do wrong? Well, I think I know. I peeled the egg plant before I cooked it. Oops. Don't do that. My dish turned out to be a sauce (mish mash mush). It was also very gross with the oyster sauce. If I had not used the oyster sauce, it probably would have been better tasting.

Sweet and Sour Seitan

This recipe tastes amazing! I am not sure why, my sweet-and-sour sauce was watery (I think I used too much pineapple juice). I had to add more corn starch and drain some of the liquid, even after I added the extra corn starch. I think it is really necessary to brown the seitan (or tofu, which is just as good to use with this recipe). If the seitan or tofu is a bit crispy, it will make all the difference for the better. Note to self: the whole can of pineapple chunks is not necessary for this recipe. Half the can would have sufficed.

Blackened Tilapia with Secret Hobo Spices

This is SO good. The seasoning mix yielded way more than I needed so I put it in my empty paprika container (I used the rest of my paprika on this recipe...it calls for a lot and is so worth it). The fish can be cooked on the stove, but I chose to put it in the oven so I cook make a bunch at once. It turned out fine. Also, I had purchased a large amount of tilapia and seasoned it with the hobo seasoning and BEFORE I cooked it, I put a bunch of the seasoned fillets in the freezer so I would have them for another date. When I cooked the frozen ones (defrosted) a month later, they tasted fresh and perfect. This seasoning is excellent.

Portobello Penne Pasta Casserole

Oh my gosh! This was an absolutely amazing recipe. I prepared it on a Sunday and warmed it up on a Tuesday (easy for a full-time, working mom). It was just so good. I followed the recipe, but I used canned spinach (drained). It was excellent!

Broccoli and Cheese Stuffed Shells

This was a great idea! I love the idea of merging broccoli and ricotta into a dish like this. I work full time so I am always looking for meals to make on Sunday (and easy to pop in the oven on a Tuesday). I did add an egg to this recipe because I am used to using egg in dishes that involve ricotta. I also used fresh broccoli (cooked it in the microwave for 3 minutes) and put it in the food processor to make it into itty bitty pieces.

Green Rice I

This is an excellent recipe -- I loved the texture and the ease of making the dish. I used all the of the items listed in the recipe (including the condensed milk, which I had never used before). The recipe turned out great -- very solid and delicious. I added plain bread crumbs to the top of the rice before I baked it and it was a nice touch. The bread crumbs slightly browned. I did have to add salt to the dish when it was on my plate. It tasted a bit bland without the extra salt. Overall, easy and delcious.

Banana Nut Muffins

This recipe is perfect. I made the muffins with this recipe once before (with three bananas), but I only had one large banana this time. It was still excellent. I would not change anything about this recipe. Fabulous.

Soft Peanut Butter Cookies

The recipe is just what I needed for the famous "peanut butter hershey kiss" cookies. The cookies came out great (but I listened to the other reviews and put in 3/4 c. of peanut butter).

Pumpkin Cookies V

Definitely put on the icing when the cookies are warm -- the icing scours the cookie like lava down a mountain. The cookie recipe is great. Definitely a recommended choice for pumpkin cookies.
