Baked Buffalo Chicken Strips

Pretty good. Subbed Frank's sauce for regular cayanne and still turned out nice. Not exactly like a deep fried version but very crunchy with the panko. Didn't really miss the frying. Served with Ranch dressing.

Almost Eggless Egg Salad

I didn't like it. I've been looking for ways to make tofu dishes and thought this would be a nice lunch. I have yet to find a recipe that I can stand the tofu. It would be unfair for me to give a lower rating though because I LOVED the dressing. I will be using it for regular egg salad. I will probably leave the tumeric out next time, wasn't crazy about it's flavor.

Cranberry Apple Stuffed Pork Loin

Pretty good. Left out the nuts because I didn't have any and used crasins (cherry) because I had just enough left in a bag and that's what I had on hand. The apple and cranberries were ok in the stuffing but it would have been just as good with just the prepared stuffing.

Too Much Chocolate Cake

I've made this cake 2 times now. Both times I used half the oil which was just by my choice. The batter is VERY thick, but resist the urge to add liquid. It will rise just fine. I also used mini chips. I'm looking foward to trying different cake/pudding/chip combos. Thanks for sharing!

Whole Wheat Blueberry Pancakes

I've never made pancakes from scratch. I had blueberries to use and was curious about the whole wheat. These were very good. I have nothing else to compare it too, but I don't think I need to find anything. I ate a couple the morning I made them with a little butter. Being single and living alone, I had no one else to help me eat the rest so I froze them. The next morning, I took one out, nuked it for about 15 seconds then popped it in the toaster just to get rid of some of the moisture. I ate it with a little whipped cream cheese and it was good! I'm not much of a breakfast person but I know I need to eat. I ate one pancake and was fine until lunch. I will be making these again to throw in the freezer for an easy breakfast. Thanks for the recipe! Oh, and I don't know how much it changed the flavor, but I added a 1/4 ts of vanilla and 1/2 ts cinnamon. I also used water because I didn't have milk. I will definitly use milk next time.

Grilled Lamb with Brown Sugar Glaze

I was looking for something to do with lamb and I've found it! I stumbled on this looking for something else and decided to try it even though I wasn't sure about the ingredients and how they would taste. I did a semi-boneless leg and it was awsome. I think I'm going to try this on a flank steak. Thanks!

Colleen's Slow Cooker Jambalaya

This was a great recipe. What I did different was leave out the thyme and oregano, (didn't have thyme and don't like the taste of oregano) used two 8oz cans of diced tomatoes with green chilies drained, a 28 oz can of crushed tomatoes, teaspoon chopped garlic and did not add shrimp. (I just totally forgot to get some when I went shopping for ingredients). The last thing was I used smoked turkey sausage and added about 2 cups of cooked rice at the end of cooking. Not exactly the original recipe, but it got me started with what turned out to be a keeper for me. I'm single and live alone so most of it I threw in freezer bags as single servings and will have it for lunch. Thanks!

Tiramisu Layer Cake

I have made this for my parents for Christmas for the past 2 years. Tiramisu is their favorite desert so I thought I'd give it a try. Made it exactly as the recipe says both times and both times it was AWSOME! Thanks!!!

Curried Coconut Chicken

This was my 1st attempt at anything with curry. It was a great recipe to start with. The only problem I had was that after simmering for about 45 minutes, the chicken was so dry I threw it out. I did take the rest of the sauce and finish my rice with it. When I made it a second time, I browned the chicken, took it out, simmered the sauce for about 30 minutes with the onion and garlic then added the chicken back for another 10 minutes. Came out PERFECT!
