Pumpkin Nut Muffins
These were easy and delicious. Used toasted pecans and added a half a pecan to the top of each muffin which was cute and tasty. Added raisins to mine and decided I wish I had left as the recipe stated. They definitely contributed their own flavor. My husband ate two the next day and said they were still moist and good. Did add the 1/2 tsp. of salt that others recommended and used heaping measurings of the spices as I like spice.

Easy Peanut Butter Bars
Truly simply. Hosting once a month parties and need quick and easy bar recipes. I added 1 cup roasted salted peanuts (that I toasted in the oven) and 1 cup dark chocolate chips. I think the 1 cup peanuts might have been a bit much. Next time I'd do 1/2 a cup or 3/4 cup, but 1 cup chocolate chips was right on the money. Moist and delicious!

Easy Asian Pasta Salad
My vegetarian husband tried one bite and exclaimed, "F@%$ Yeah!" I used whole wheat pasta, snow peas, Asian garlic chile paste, and reduced the sugar to 2 1/2 tablespoons as this was our dinner. I added one whole seedless cucumber, about 2 cups of kale, about 1/2 cup cilantro, and 1 tablespoon of miso paste. I boiled the pasta and when there was 1 minute left to cook I added in the snow peas and the kale. We also mixed everything up and ate it right away as we were making it for a weeknight dinner. There was plenty of sauce even with the added vegetables. It made 10 cups and with all those additional veggies each cup was only worth 3 Weight Watchers points! It would be good with toasted peanuts if you're looking to add some protein. Next time I'll try making it with soba noodles. This will definitely go in our weekly rotation this summer. Loved, loved, loved it!!!!!
