Mom's Zucchini Bread

As others have noticed, the batter seems dry before you put in the shredded zucchini. But, don't worry! Once you add the zucchini, the batter becomes much easier to stir. I also noticed that I had to bake it for over an hour to completely cook the bread. After removing from the oven, leave it in the pan for at least 10 minutes to cool down. I removed one of my loaves prematurely and it was a little ugly, but still tasted great.
