Italian Easter Cookies

I made these exactly per the recipe, but also added 1/4 tsp of Anise flavor. Great taste! I elected to make them into balls and they turned out a bit dry. I would bet that had I made them smaller and less thick, it would not have an issue. Great texture and flavor regardless!

Soft Chocolate Mint Cookies

I used around 1/2 of the peppermint extract due to the reviews about it being too minty. I did add a bag of York peppermint patties baking pieces for something different. My wife and her sister go crazy for these. I just made my third double batch this month. Maybe these will last untill Christmas day. I did not make them with the baking chocolate, rather I creamed the butter and sugers then added the eggs, milk, and extract, then put in the dry ingredients including 1/2 cup of Hershey’s Natural powdered Cocoa.
