Sweet Dinner Rolls

Reviewed: Apr. 20, 2012
I was really disappointed because these started out great. I didn't use a bread machine but started the yeast in the water, milk, sugar and then let the dough rise for 45 minutes. Everything was fine at this point, nice rise etc, but then from here...it all went downhill. Rolled into crescents, let sit for another hour....no rise at all. Left alone for another 30 minutes...nothing. Tried baking a few anyways but turned out heavy, dense and way too sweet. Not my cup of tea for dinner rolls...

Jay's Signature Pizza Crust

Reviewed: Mar. 26, 2011
Followed as written but used whole wheat flour. Okay on the first try. Will make again as it was good dough but with regular flour and do a butter crust since well, I'm a south side chicago girl and thats how pizza should be.

Black Bean and Corn Quesadillas

Reviewed: Mar. 22, 2011
Very good for a quick lunch or a snack. Left out the brown sugar, used bottled spicy salsa rojo, added adobo, extra pepper flakes (i like spice) and a bit of cumin. Used corn tortillas and queso quesadilla. Dipped with crema surprimo and it was defiantly muy rico!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Mar. 21, 2011
Definitely awesome and got good reviews from my family on thanksgiving. Didn't add sausage just since many members of the family are vegetarians, but it was a hit none the less.

Easy PHILLY OREO Cheesecake

Reviewed: Mar. 21, 2011
This was first cheesecake recipe I've ever attempted and I didn't want to go overboard and dive into a more complected recipe for my first one. I followed the recipe to a t and it came out without any cracks and was cooked perfectly (tried the tip of shutting off the oven and cracking the door until cooled) but the flavor, while like cheesecake, didnt have the depth or richness that most cheesecakes have. I did enjoy the crust and will probably use that part of the recipe again, but defiantly ready to dive further into the cheesecake baking world to find a truly decadent one.

Cake Balls

Reviewed: Dec. 16, 2010
For the amount of work that goes into these, with the baking, cooling, rolling, cleaning up, dipping, cooling etc etc, I didn't think it was worth it at the end. I made 24 for cookie trays before I just gave up since I was sick of dipping and after tasting one, they're really rich and almost too-rich-i-feel-disgusting-now-that-i-ate-that feeling. I did devil's food with chocolate frosting dipped in chocolate. I'd only suggest these for the "wow" factor or if you really like waiting for things to cool and dipping into chocolate for an hour or two for something that i'm pretty sure after one bite, my pants size went up. I'll still give them away with my other cookies, but only to the real chocolate lovers.

Crazy Dipped Pretzel Rods

Reviewed: Dec. 15, 2010
I made these as quick, cute, and tasty christmas gifts for co-workers and some friends and they are awesome! I did dark chocolate, milk chocolate and white chocolate with red and green sprinkles to make them festive. Put one of each type in a plastic bag, tie with pretty ribbon and ta-da! christmas goodies.

Biscuit-Topped Chicken Pot Pie

Reviewed: Nov. 23, 2010
Sort of more like chicken and dumplings, but good and fast on a cold night where you don't want to really spend a lot of time cooking and just want some quick, hot comfort food. Made a few changes due to what I had on hand, used cream of mushroom soup, omitted the thyme, but added lots of onion/garlic powder, black pepper and some seasoning salt. Used a frozen bag of mixed veggies. Will make again.

Tuna Noodle Casserole II

Reviewed: Nov. 8, 2010
I was feeling under the weather today and wanted some comfort food that wasn't going to take a lot of energy or effort to make. I did make a few changes based on what I had in the house at the time. Used whole wheat pasta shells, added corn and peas, only used cream of mushroom soup, used real shredded sharp cheddar cheese (processed cheese just freaks me out) and instead of potato chips, used a light sprinkling of breadcrumbs. Definitely made me feel a bit better (just something about making a casserole) and even though I halfed the recipe, still have a TON of leftovers.

Very dense, somewhat sticky and overall a really heavy muffin. Edible enough to finish the batch but not something i would ever make again.

Creamy Macaroni and Cheese

Reviewed: Oct. 16, 2010
Skip the dijon altogether. I was a little unsure about adding it due to all the negative reviews so I reserved a small bit of the finished recipe and added a small dab of dijion to that and it was awful. Otherwise, without the dijion, this mac and cheese was just okay. Nothing special and nothing I'd ever make again, but it was a good try. I prefer baked mac and cheese over this one.

Creamed Spinach

Reviewed: Oct. 16, 2010
I needed to bring creamed spinach to a school potluck since I volunteered to make sides and creamed spinach was what was voted on....great...the one side dish i've had a million times but never made for myself. Followed the recipe except for nutmeg (didn't have any) and made it more like how i'm used to it (chicago bergoff style) with red pepper flakes and a few shakes of mexican hot sauce which gave it a nice kick but wasn't overpoweringly spicy since it was for a crowd. Everyone ate it all up.

Eggplant Parmesan II

Reviewed: Oct. 16, 2010
This was my first attempt at homemade eggplant parmesan, and i must say, i'm pretty happy in how it turned out. I didn't skin my eggplant and baked longer (10 min for each side) and added onion and garlic. Only downsize was boyfriend wouldn't even try it since he "can't stand the texture of eggplant" but that just means more for me. Will make again.

Super Easy Doughnuts

Reviewed: Mar. 17, 2008
My boyfriend got a craving for doughnuts tonight and since it was late and all the local places were closed, I tried this recipe. I followed it almost exactly (just switching the shortening for the same amount of butter since I don't buy shorting and using soy milk and not adding vinager to it since I wasn't sure how it would react to it) and after getting used to how they cook (they poof up in the oil and if the oil is too hot, get brown on the outside quickly but still are doughy on the inside) I got about 12 that turned out looking like doughnut holes. I dusted them in powdered sugar and put them on a plate. I tried one and they are okay, but very cakey, in my opinion. My boyfriend had about 2 before "feeling greasy" from eating them. Maybe I did something wrong, maybe it was because I subbed some of the things in it or maybe this just wasn't what we were looking for. I think I'll stick to buying doughnuts if the craving hits (we really aren't big on "junk foods") rather then making them again.

Peanut Butter Bars I

Reviewed: Feb. 23, 2008
oh my goodness these are good. i have been looking at this recipe for awhile, but finally got around to making it today. i used 1/2c butter as some of the other reviewers suggusted and they turned out great. my only complaints are that one side of the pan has more chocolate on top because of my slanted countertops, but that's not the recipes fault! and it makes the one side of pan that much better!
