Baked Salmon II

Reviewed: Feb. 12, 2005
First time making salmon and it came out so moist and flavourful. Omitted the parsley and increased lemon juice and garlic. Next time I would probably marinate it for longer to get the flavour to the center of the fish...other than that, served over a bed of egg noodles, it's like a gourmet meal !!! Thanx for making it so easy with this recipe Norma !!!

Italian Vegetable Soup

Reviewed: Jan. 18, 2005
With a few adjustments it turned out to be pretty nice.I used less tomato sauce(8 oz can) 'cause not too keen of the tomatoey taste. It still tasted a bit sweet, will use less diced tomato next time. Used 5 cups of freshly made beef stock. And boiled pasta seperately like someone suggested and added to soup bowl.Added a bit of mozzarella for texture and flavour.Overall quite a nice blend of vegetables !!

Cinnamon Hazelnut Biscotti

Reviewed: Jan. 8, 2005
First time making biscotti and they came out smelling and tasting great. Dough is a bit difficult to work with as it spreads out too much maybe because of the butter. Next time I will use 1/2 cup. The chopped and toasted hazelnuts gave it an excellent flavour. But even after baking the second time they were a bit soggy so had to bake them for an additional 10 mts. Will definitely be making more of these.Thanku for a great recipe Kris !!

Six Can Chicken Tortilla Soup

Reviewed: Jan. 8, 2005
Pretty good, considering everything came from a can. But for our taste i had to add more spices like cumin powder, salt, chilli powder, taco seasoning and garlic powder.Added a spoonful of sour cream and tortillas and cheese...quite filling.

Baklava

Reviewed: Sep. 28, 2004
Absolute Heaven !! I was craving baklava and am soo happy to find this recipe and with the result. It is an effort making this but well worth it.After reading the reviews i took advice and covered the fillo dough with plastic wrap and a damp sheet..worked well...used lots of melted unsalted margarine with a brush and a combination of Pistashios,Walnuts and Almonds. Also added 1/2 cup of castor sugar and a sprinkle of cardamon powder to the nuts. Also added a tablespoon of lemon juice to the sauce. To keep the fillo from curling, sprinkle a bit of water just before baking and make sure to cut all the way to the bottom before and after baking.Pouring cooled sauce over hot baklava really helps from preventing it becoming soggy. Thanku so much for a great recipe..will definitely be making more of this again.Soo Good !!
