Thighs on Rice

SO easy and I cooked it in my mini convection oven. Made some adjustments...used 6 small frozen boneless, skinless thighs. Par boiled in chicken bouillon until no longer pink then used 1 cup of boiled broth to melt second bouillon. Mixed 1 cup boiled chicken water and 1 cup bouillon with basmati rice. Used half of the butter and approx 1 tbsp olive oil in the rice mixture. Added minced onion, garlic powder and a small amount of cayenne pepper. Mixed in one can of corn, drained. Topped with salt, pepper and italian seasoning. Baked 350 in mini convection oven in a 8x8 dish. Stirred rice every 10 minutes or so. Cooked 45 minutes and was perfect!! Loved that I had all ingredients on hand, very quick easy and budget friendly! Was extremely flavorful. My husband raved over it! Asked me to make it once a week...

Southern Candied Sweet Potatoes

YUMMO!!!! The best....followed others advice and used some brown some white sugar. Cooked overnight on WARM in crock pot. Turned up to low in the morning. Were soft by noon. Removed and topped with pecans and mini marshmallows baked in oven until melted. Served for Thanksgiving and were the first empty dish!!!!

Stuffed Peppers My Way

I always use this for my vegetarian daughter on nights the rest of the family has meat. Very flavorful and easy to make. I use basmati rice cooked in vegetable broth. I also cut up some of the pepper caps and sauté with the tomato mixture. Cooking the stuffed peppers in muffin pans is a great tip!

Easy OREO Truffles

AMAZING!!!! Like eating a dark chocolate truffle only bigger..... SO EASY to make! Have made them 2 X's and both times they disappeared within minutes of putting them out! Thank you so much for sharing!
