No Roll Pie Crust I

Used whole wheat flour and sesame oil for my quiche. I stuck it in the freezer for about 10 minutes, prebaked it for 5 minutes before putting in the filling, and I think as a result did not turn out flaky at all. I probably should not have made the substitutions. By the way, 1/4 of the recipe filled up 8 spots in my mini muffin pan.

Baked Omelet Pie

This recipe is really easy to substitute ingredients for! I didn't have any parsley or tomatoes, added mushroom and onion, used sausage instead of ham, and used mozzarella cheese instead of cheddar, and this omelet turned out delicious! Will use again.

Summer Rainbow Salad

Avocado Stuffed Yams

I didn't add olive oil or cumin because I didn't have any. I also added green peppers, and put in more green onion and lime juice than the recipe called for. Felt like recipe didn't need cheese. Couldn't really taste the avocado, but that's probably because of the overload of lime juice and as a result of adding too much green pepper. If I make this next time, I will add some garlic as well.

Peanut Butter Temptations II

This was a great recipe even without the peanut butter cups, since I was looking for a cookie that I could bake in my muffin pans. I made a few substitutions based on what I had. I added 1/4 cup of white sugar, 1/2 cup of raw turbinado sugar, 1/8 cup of regular splenda, 6 tbsp corn oil, and whole wheat flour in place of the sugar, butter, and all-purpose. I also used Skippy Honey Roasted Chunky PB. This was my first time baking with Splenda, and it made the cookies too sweet and the aftertaste of the sweetener kind of ruined the cookie. Otherwise, the recipe was perfect. Couldn't even taste the difference between the whole wheat and all-purpose. Bake until the tops of the cookies crack, as the browning occurs only on the sides of the muffin pan.

Preety's Chickpea Salad

Little too much onion for me, even though I am an avid onion lover. I didn't have vinegar or oil on me, which might have overall altered the potential flavor of the salad. With my alterations, this salad was just okay.

Pumpkin Stew

I used a 10 pound pumpkin for a serving size for 3 people. I prebaked the pumpkin for 30 minutes for easy cutting (which is also supposedly good for enhancing the flavor). Instead of green peppers, I added celery, I added only 2/3 of the salt and no bouillon cubes, and added twice the amount of water the recipe called for. I don't think I used the right pumpkin since the pumpkin meat was not very tasty. However, the presentation was beautiful and the stew itself was wonderful!

Roasted Garlic Mashed Potatoes

Since I was just eating by myself, I thirded the recipe. I cut down the baking time to 45 minutes for the garlic and added 1/3 cup of milk because I had no butter. I also thought that there wasn't enough garlic flavor, which I think had to do with the fact that I just put the garlic in the potatoes without the oil, which probably had all the flavor. I would probably pour in all the oil with the garlic next time.

Golden Harvest Cookies

Didn't have cloves or pecans, and used the more mild-tasting mozzarella cheese. As a result, I don't think the cookies had as much of a kick flavor-wise from the cheese, but it had a great texture! I think it would have been easier to first mix in the carrots, then cheese, then oats, then raisins, then pecans. Also, because there were so many dry ingredients, I found it easier to roll into balls and press down into the cookie pan than to drop by the tablespoonfuls because they tended to fall apart.

Soft Whole Wheat Sugar Cookies

I didn't have any apple spice, so I just added some nutmeg and cinnamon, and used a little less than a cup of oil instead of butter. It came out rather delicious.

Oatmeal Whole Wheat Quick Bread

Made a single serving spread across three mini muffin cups. Didn't grind oatmeal, used soy milk, and added a dash of cinnamon and vanilla. Baked for seven minutes in those three mini muffin cups. Very easy and was delicious on its own!

Cinnamon Apple Pancakes

Used a cup of cinnamon applesauce in place of the apple, honey, and oil; soymilk in place of milk; and added vanilla extract. The pancakes were a bit dry and I think there was a little too much baking powder. But it was the perfect amount of sweetness.

Favorite Old Fashioned Gingerbread

Here are all my substitutions, which still led to a great-tasting and moist gingerbread: 7.5 tablespoons vegetable oil instead of butter, 3/4 cup of brown sugar + 1 tablespoon water instead of molasses, 3 tablespoons mayonnaise instead of egg, no cloves, and about a tablespoon of fresh ginger, finely minced. I poured it in a 3 by 7 bread pan, filled it halfway, and baked it for about 40 minutes. Thought it was delicious!

Plantation Gingerbread

I halved the recipe for a bread loaf pan, and I made the following substitutions: 1/2 cup oil for 1/2 cup butter, 1 egg instead of 1.5, 1.5 teaspoons FRESH ginger, and I baked for about 55 minutes for it to cook all the way through. Thought it was delicious straight out of the oven, especially the crust! Yummy!

The Best Rolled Sugar Cookies

First try, with oil: I didn't have butter and used oil, which made it more difficult to roll out, cut out, and gave it a crumblier texture. Still tasted good though. Second try, with butter: I liked them a lot better warm out of the oven, since the second day they were chewier (I like crispy). Adding some cinnamon and nutmeg make them tasty as well.
