Spaghetti Chicken Casserole

I made this tonight for dinner following other user's tips for replacing the pimentos and bell pepper with tomatoes, mushrooms and onions. I also added 1/2 cup of parmesan into the shredded cheese, and mixed whipping cream into the wine. I have to say that it turned out fabulous! My husband absolutely loved it! The only tip I can provide is that after I added the cheese on top for the additional 15 minutes, I found that the onions weren't done yet and cooked it at 350 degrees for an additional 15 minutes.

Baked Pork Chops I

I made these for dinner tonight. They are wonderful! I used bone in pork chops. I browned them very well on the stove top then put them in the oven pan. Then I deglazed the stove pan with the chardonnay. I also put sliced onions in with the chardonnay and cooked it down a little. I then mixed that with the soup/milk mixture and poured it all over the chops and baked them covered for 1 hour and a half. They turned out incredible and tender! I served over rice with roasted asparagus. Definitely going into my rotation!

Grill Master Chicken Wings

The reviews are correct, these wings are amazing!!! I followed the recipe to a T the first time, but now, I omit the butter part and just toss the wings in Frank's Buffalo wing sauce after I take them off the grill. They are fantastic!

Bacon and Tomato Cups

THE BEST APPETIZER EVER! I took it to 3 parties over the holiday season and it was devoured. Everyone raved about it. Like others, I cut the biscuits into 1/4ths, used only enough mayo to coat, and added a little bit of garlic. I will be taking these to every party from now on!

Spicy Refrigerator Dill Pickles

Absolutely amazing. I will never ever ever eat store bought pickles again. I halved the amount of cucumbers and doubled the brine since it's just me and my husband. I also cut the sugar and added sliced white onions and fresh jalapenos. They turned out perfect! I'm already on my third batch.

Herbes de Provence Roasted Chicken and Potatoes

Tried this tonight on a whim because it is the featured recipe. Wow it is good!!! I added minced garlic, diced sweet onions and celery along with the other veggies, followed all the other directions exactly. It turned out incredible. I definitely recommend this recipe! I had to go to two different stores to find the seasoning mix though. So don't give up trying to find it, it's worth it!

The Best Meatloaf I've Ever Made

Last night was the second time I've made this. The first time I made a mistake and didn't add enough breadcrumbs and it fell apart. This time though, I made it with ground turkey (it still turns out excellent) and added enough Italian seasoned breadcrumbs and it was absolutely amazing! Not a single bit left in the pan.

Goat Cheese and Arugula over Penne

Excellent!!!! I didn't have arugula, I just sauteed fresh baby spinach with olive oil and minced garlic until it was wilted, took it off the burner, mixed in the goat cheese until it was slightly melted, then added the tomatoes and pasta. Like others, I sprinkled Parmesan on it too. It was REALLY good!

Simple Strawberry Sauce

So simple and easy. I had a plain piece of cheesecake that needed a little something. This was perfect, I had NO idea that you could make it so easily. Thank you for sharing, because without this recipe I would've been lost!

Chicken Enchiladas II

This was incredible! My husband took one bite and said it was the best enchiladas he's ever had in his life. I took chicken tenders and seasoned them with chili powder, garlic, cayenne, salt and pepper. Then I browned them with some olive oil. I sauteed a diced red onion and diced fresh jalapeno with the can of chiles. Then I followed the rest of the directions, except I used corn tortillas instead of flour. It turned out spectacular!!!

Supreme Scalloped Potatoes

I made this last night and it is AMAZING. Some of the best scalloped potatoes I've ever eaten. I've tried other recipes like this, but with no luck. If you follow this recipe, you can't go wrong! I can't wait to make them again. The only thing I did was saute the onion in some butter until translucent, then mixed them in with the rest of the ingredients. I also sliced the potatoes really thin, then boiled them, then mixed them with all the ingredients and poured into a casserole dish

Orzo with Tomatoes, Basil, and Gorgonzola

I made this tonight for dinner and it is SO good. I wanted something light and fresh to go with our grilled chicken and this was perfect. I followed the recipe except added feta instead of gorgonzola for personal tastes. It would be outstanding with any of the two cheeses or blue cheese depending on what you like. I added a pinch of fresh pepper and sea salt when I toasted the orzo.

Orange Chicken Stir Fry

I thought this was great. I made the sauce and marinated the chicken in it for a couple hours. Then strained the sauce into a pan and reduced it until it was thicker. I cooked the chicken in my wok, then mixed in frozen veggies and poured the sauce over it. I let it simmer for a while and served over Jasmine rice. I will definitely make this again!

French Onion Soup I

FABULOUS! Except that you have to cook the onions WAY longer than specified. I cooked yellow onions on medium for about 30 minutes. I used regular slices of white bread, toasted them in the toaster slightly, then put the cheese on top and broiled them for a minute. I didn't have oven safe bowls, so I just ladled the soup in a regular bowl and added the bread with the melted cheese. YUMMY!

White Bean Chicken Chili

SOOOOOO delicious!!! Like others, I used a can of salsa verde instead of the tomatillos. I also used a can of fire roasted red peppers and a can of rotel. I added a good helping of chili powder as well as a squeeze of fresh lime. Let is simmer on the stove and served with sour cream. Amazing!!

Broccoli Cheese Soup

Followed the recipe practically to a T and I agree with all the others, it is the BEST broccoli cheese soup I've ever had!!! The only thing I changed was add 3 cans of broth at first, then mix the cornstarch with the 4th can at the end.

Tomato and Pepper Salad

Very good! I omitted the bell pepper, added a splash of balsamic and a splash of red wine vinegar and tossed in some chopped fresh basil. So light and fresh! Perfect for summer!
