Kalua Pig in a Slow Cooker

I made this for my husband's birthday. I got a 4lb pork butt with bones (all they had) and cooked it on high for four hours...added 2 cups of cabbage and 1 more tspn of Liquid Smoke...then cooked for one more hour. I cut up some fresh papaya and pineapple on the side, made sticky rice (sushi rice) and bought some sweet hawaiian rolls. The only thing missing were the fire throwers ;-)

Black Bean and Corn Quesadillas

This was pretty incredible. I just added some salt and pepper and a dash of cumin to the bean mixture. I only had muenster cheese and some shredded mild cheddar. Great combo.

Italian Vegetable Soup

Best soup I ever made...I used fresh herbs and veggies instead of canned. I used beef stock from a jar and created veggie stock within the soup with the pulp from the veggies I juiced this morning. I used ground turkey instead of ground beef and added hot italian sausage links to add some kick. So good.

Slow Cooker Pinto Bean Bonanza

Delicious. I made it with venison sausage instead of kielbasa. I substituted one cup of chicken stock for 1 cup of water and added a can of diced tomatoes. I also added two teaspoons of worcestershire sauce in for some added flavor. Served over rice. Totally awesome.

Hamburger Steak with Onions and Gravy

This is such an quick, easy and delicious recipe you can make in no time. I substituted gluten free all purpose flour because my husband has celiac's disease. I also added a small can of portobello mushrooms. Other than that I followed the recipe exactly and everyone loved it!!

Wasabi Mayo Salmon

Very yummy!!! I used wasabe paste instead of powder since I couldn't find any, and it was delicious. Quick and easy recipe. I recommend it when you don't have a lot of time to cook.

Rosemary Turkey Meatloaf

This was a good recipe. I thought that the vinegar was a little overpowering so next time I will cut it in half. The fresh rosemary was wonderful. It was very flavorful and aromatic.

Homemade Tomato Sauce I

I made this for Christmas dinner to serve with stuffed shells. So delicious! I used two 28oz cans of whole tomatoes instead of fresh ones to lessen the work load. Next time I will try from scratch. The fresh veggies made it so yummy and healthy. I used five cloves of garlic and cut out the butter. I also increased the italian seasoning to one tspn. and added a 1/2 tspn. of sugar. I also added a tspn of salt at the two hour point and pureed the entire batch at the very end. Big hit!
