About this Cook
I've been cooking for at least 40 years. I enjoy my Lord, being in Bible college, working in children's ministry, practicing hospitality and swimming.
My favorite things to cook
Certainly Italian (from my heritage), Mexican, Cajun, good ole American roasts, potato salad and such, turkey dinners, well, I just Luv2cook!
My favorite family cooking traditions
Christmas, Thanksgiving, birthday parties, national holidays, anything but Mother's Day :-)
My cooking triumphs
I've cooked for reunions, wedding receptions, funerals, Intl students, co-workers, neighbors, lots of family gatherings and many friends. Some of my guest's favorites are King Ranch Chicken SALAD, Veal or Eggplant Parmesan, Broiled Tilapia (variation from this site), enchiladas, Gluten & sugar-free carrot cake (from scratch) & the easy dump cakes (from this site).
My cooking tragedies
When I was still a teen and while babysitting my nephews I cooked fried chicken for dinner. I laid my fingers in the hot grease while trying to place a piece of chicken into the pan and they fried instantly. It was very painful!

Banana Banana Bread
I've been baking this for years since I found it on this site. I've also made it gluten-free and Paleo. So easy and so good!

Pumpkin Polenta Cake
My husband, who is not gluten-free like I am, loves this! He eats it broken up with milk poured on it like cush. 2 cups of pumpkin~1 can. I use 4 whole eggs instead of any whites, 1/2 cp agave for brown sugar, reduce the cloves to 3/4 tsp and prepare from beginning to end in the blender. Easy, smells wonderful, tasty and he doesn't realize how healthy he is eating!

Lighter Mexican Meatloaf
I have to admit I made adjustments but I think it would have smelled just as divine if I hadn't! To make it gluten-free I used crushed tortilla chips in place of bread crumbs, mexican spices instead of the mix. I also used frozen instead of canned corn, all turkey, onion & bell pepper instead of chiles, 2 eggs instead of just whites and taco sauce instead of enchilada sauce (only because I had just made enchilladas last week). I will definately make this again and again, trying different variations, as it's so adjustable to one's preference. Yummy!
