Chinese Chicken Fried Rice II

This was good. I was tired and didn't feel like cooking - this fit the bill perfectly. Already had leftover rice. Added some chicken and garlic powder - also sautéed onion, some peppers and a bit of shredded cabbage. Hubby really enjoyed it too. Thanks for the recipe!

Rhubarb Marmalade

This was easy and very yummy! Had trouble grinding up the oranges (I need a better food processor) but I just sliced the rind into fine pieces. I also added a bit of candied ginger, as suggested by another reviewer. Delish!

Slow Cooker Ham

Ahhhh-maaaa-zzzzing! And I'm not even a huge ham lover - nor is my husband. But it was a buy one get one free deal...THIS recipe ROCKS! Cooked up the hams, the meat fell of the bones and it's all ready for my party! THANKS for sharing!

Quick Italian Vegetable Soup

This is really good. I omitted the cabbage & celery and just used what I had in the fridge (onions, green peppers cauliflower and a frozen mix of carrots, broccoli, etc). I 'sauteed' the veg in a bit of water so there is no fat in the recipe and this is perfect for my WW points! I used Club House Spaghetti Seasoning. This will be yummy pureed too for a nice smooth texture soup too.

Totally FABULOUS! I also added 1 tsp Watkins vanilla. Realized I didn't have sour cream so I used Greek yogurt instead. These are hands down A-M-A-Z-I-N-G! Thanks for sharing the recipe!

Best Big, Fat, Chewy Chocolate Chip Cookie

Oh My. This recipe, plus a couple of tweaks (less sugar, less vanilla, bit more flour) and, at 40 years old, I have FINALLY found THEE PERFECT CHOCOLATE CHIP COOKIE! Also added walnuts. Hubby incredibly impressed with these cookies too. If we weren't already married, I think these cookies would have gotten me a proposal.

I grew up on these and still LOVE them! The only thing I do differently is add oregano instead of the celery salt. I always serve this with boiled potatoes, veg and a green salad - just like my Mom used to. Mmmm - total comfort food.

Made this bread tonight to go with my Barbados Style Curry Chicken. It's the first time I ever made Naan. A-M-A-Z-I-N-G! Used the George Foreman grill - sans butter and garlic. Truly delicious. Chewing the first one as I type this. DH is going to marry me all over again! LOL

Pumpkin Casserole

This was really good. As other reviewers stated, it's just like pumpkin pie, without the crust. It's a bit denser, due to the flour. We had this for dessert, with a bit of whipping cream and dusting of freshly ground cinnamon. I will be making this again!

Sweetly Stewed Rhubarb

HA! So interesting that last reviewer suggested using kitchen shears/scissors for cutting the rhubarb - I just discovered this trick tonight and it worked GREAT (and quick!). My rhubarb is stewing as I type and I was scrolling for a recipe for the remaining rhubarb when I stumbled on this one. My recipe is the same, except I vary it. Tonight I omitted the cinnamon and added fresh grated orange rind and juice...delightful with homemade toast in the morning!

French Baguettes

This recipe is EASY, FAST & DELISH! I first made it last night, exactly as the recipe was written. Then I made two more loaves this morning subst. with Whole Wheat flour and didn't do the egg wash. The baguettes were baked in our wood stove and not only do they look fabulous and rustic but they are absolutely scrumptious! Thank you for the recipe!

Jo's Rosemary Bread

This is quite good! I didn't have any rosemary (which is shocking - I LOVE it and normally have some!)...I used Italian seasoning, basil and black pepper. I only gave four stars simply because I prefer a slightly heavier bread. I will absolutely make this recipe again. It's fab for grilled cheese with soup too...comfort food!

Pineapple Upside-down Cake Martinis

HOOCHIE MAMMA! These little drinky-poos will have you licking your lips while watching the room spin in no time flat. Delish but potent! I couldn't find pineapple juice (I live in the boonies) so used pineapple cocktail juice instead (pineapple, passion, mango)...also didn't have vanilla vodka so just added a couple drops of Watkins vanilla and as another review suggested, 1/4 cup of amaretto. Wow! My girlfriend and I took one sip and knew we were in for trouble! Our hubbies found them too sweet - so this is definitely one for the gals. Enjoy!
