White Bean Spread With Garlic & Rosemary

Great base for an excellent dip. I overcooked a pound of Navy beans so I decided to make a dip out of it. I added lemon juice, ground toasted cumin seeds, red pepper flakes and Italian parsley. The combination of cumin and rosemary is fantastic!!! Couldn't stop eating it right out of the food processor. BTW, use a food processor, much easier and it makes it nice and creamy.

Pinto Beans With Mexican-Style Seasonings

I just spent 30 minutes digging flabby bacon out of the pot, fried it up and threw it back in. Otherwise, yummy! 2 1/2 hours was perfect for the beans. I tasted it when I put the bacon back in and thought it needed a TBSP of tomato paste and a TBSP of brown sugar to give it a little more depth. I will be making these again!

Black Bean and Salsa Soup

I loved how easy this was to make!! A couple of strong suggestions: 1. Add a chipotle in adobe sauce to give it a nice smoky flavor 2. Quadruple the beans! I smushed up 2 cans of beans with my blender and then added another 30 ounce can of black beans to give it texture. 3. Add ANY leftover meat you have, ie. chicken, steak, hamburger meat, to give it that extra richness. 4. Add garlic, lots of extra cumin and lime juice. 5. Garnish with plenty of cilantro, sour cream, green onions and crunched up tortilla chips 6. Double the recipe or you will be just doing it again the next day!

Balsamic Chicken with White Beans and Spinach

I love all the ingredients this recipe has in it but it was boring. It needs seasoning!! I added thyme and poultry seasoning, used 1/4 cup WHITE balsamic vinegar so it wouldn't look ugly, added onions and mushrooms. I won't make this again.

Curry Kale and Potato Galette

Loved this!!! I used 2 bunches of kale and topped with provolone cheese at the end. Make sure your potatoes are nicely browned on the top before you put your cheese on. Delicious and easy!!

Connie's Zucchini "Crab" Cakes

To make them taste more like "crab" cakes, I added a packet of bonito flakes. I served them over fresh tomatoes and squeezed some Japanese Mayo over them as a garnish. I also shredded a half of carrot in the mix to give it a pretty color.

Microwave Potato Chips

These are the best right out of the microwave!! I didn't cut my paper thin so it took longer to "cook". Used Kosher salt and fresh ground pepper. A great snack for low cost!

Roasted Tomatillo and Garlic Salsa

I grilled the tomatillos on the grill along with the jalapeno's. The more cilantro the better! I added a little sugar, cumin and lime juice to kick it up a bit. Yummy!

Lime Cilantro Cauliflower "Rice"

Wow! This is the second time I am making this. I omitted the butter, really doesn't add anything to the taste but calories, and added finely chopped scallion and fresh ground pepper. I could eat the whole thing in one sitting!!! Don't be afraid to add the lime zest, cilantro and lime juice to taste. I used 2 limes, zest of 2 limes and a bunch of cilantro.

Mrs. Sigg's Fresh Pumpkin Pie

First time making pumpkin pie from real pumpkin. The texture is so creamy...perfect! I drained the pumpkin for many hours in a colander and made the pumpkin pie spice mix off this site, adding a small amount of cloves. I doubled the recipe, made 2 pies and used the leftover batter to make a pumpkin bisque with a little bit of peanut butter in it to offset the sweetness.

Restaurant-Style Coleslaw I

LOVE this coleslaw!!! After reading several reviews, I added 1 Tbsp celery seed, 1/2 t. dry mustard and used all buttermilk instead of adding milk. I also sweetened it with Splenda.

Agua de Melon (Cantaloupe Juice)

I made this using a lot less water, only 2 cups and didn't add ice, just refrigerated after making it. This filled up a blender. Start with 2-3 cups of water then add to taste. Very refreshing!

Smoked Paprika Vinaigrette

This was different and pretty good. It reminded me of a French type of dressing, which isn't a personal favorite of mine. Probably won't make this again.8/11/12 UPDATE: This recipe is much better if you use a good honey. I used sage honey and it was sooo much better! I have made this for 2 different get togethers and everyone LOVES it!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

The recipe was somewhat confusing. I mixed half of the chipotle mayo with the honey cumin dressing and tossed the slaw with it. It turned out great! Loved the crunchy fish and the chipotle mayo was perfect...loved the spice!
