Great New Years recipe, but I made some changes too. I use Goya ham seasoning instead of the hamhocks (1 packet per pound of beans), and I also used a little cayenne instead of red pepper flakes. I garnished with some fresh green peppers, onions & diced tomatoes rather than cooking them in the recipe as another cook suggested. I got rave reviews and it is fairly low in fat!

Roasted Chicken Noodle Soup

The soup was FANTASTIC. I used this recipe as a guide for "what I had" to make chicken soup. I used 3 chicken bouillon cubes in the same water after I boiled 2 chicken breasts (instead of the poultry seasoning and low-sodium chicken broth). I also used 1 cup of skim milk instead of evaporated milk at the end. This is first time I ever made soup w/potatoes and noodles, and also the first time I ever added oregano to chicken soup. I always add a little paprika too. It was by far the best chicken soup I've ever made and my husband and 2 boys agreed. Thanks for the recipe!!!!!!!!!!!!!!!!!!!!!!

Cranberry Sauce I

We made this again this year, and it helps to reduce the sugar and cut a little of the OJ with water. My boys love stirring the cranberries and watching them POP! It's a boy thing. *This is definitely a FUN WAY for Moms and their sons to spend time together in the kitchen!!!!
