Baked Buffalo Wings

This is a great recipe for baked wings. I have made them several times and find that they turn out best when you refrigerate them overnight with the flour coating. Also, the amount of butter can be reduced greatly, and the wings are still just as tasty. I use about 2 TBSP of butter to 1/2 cup of wing sauce. These are definitely the best wings I have made! They are crispy and seasoned perfectly.

Chicken Enchiladas II

These are AMAZING, and I rarely say that when rating recipes. The only thing I did different was I added one diced roma tomato to the chicken mixture. I also used all low-fat ingredients when making the recipe. For the chicken, I took one large breast and cubed it and then sauteed it in olive oil spray with garlic powder, a dash of cumin, and crazy salt. I plan to make these many more times!

Apple Crisp II

Great recipe. Only used half the amount of sugar and water, as it seemed like a lot, and it was great...not too sweet or watery. Used granny smith apples, and they worked out well.

Old Fashioned Paradise Pumpkin Pie

I cannot say enough good things about this recipe. I too, let the cheesecake filling chill in the pie shell for about 25 minutes and then added the pumpkin. I then had to bake for about 50 minutes, and I added the streusel--a double recipe of it. The pie cut perfectly and eveyone loved it. I will make this every year from now on.

Chicken Tortilla Soup I

This is a great soup! I make a few modifications. One, no hominy. Two, no oregano but rather cumin. I also cook it for about an hour to let the flavors blend more. I make this soup on a regular basis, and not only is it tasty but healthy as well!

Hot Artichoke and Spinach Dip II

This is a great dip and well liked by everyone. I left out the basil and garlic salt. I also used all light ingredients...light cream cheee, light mayo, light sour cream (used 1/8 c. sour cream and 1/8 c. mayo), light cheese. I too mixed the mozzarella cheese in with the dip and then also added a layer on top. I recommend cooking for 25 minutes and then putting on broil for about 5 minutes. Will definitely make again :)

Hot Bean Dip

This was terrific...with a few changes. I left out the dried parsley, hot sauce, and the taco seasoning. Taco seasoning tends to give everything the same taste. I used fat free beans, light sour cream, and light cream cheese. I added jalepanos from a jar which I chopped up. It was one of the best dips I have had in a while. I will make this again with my changes.

Party Pinwheels

These are great! I have made them twice now, however the second time I made them at about 9 p.m. and refridgerated them over night for the next day, at about noon, and they were soggy. The first time I had them in the refridgerator for about 6 hours and they were perfect.

Best Ever Party Appetizer

I made this recipe two different ways. One with goat cheese and the other with fontina cheese (the softer version). I think both were good, however I would leave out the rosemary next time as it was a bit overpowering. Overall, good recipe.

Baked Ziti II

I agree with the others who reviewed this recipe about only adding one container of ricotta cheese. I also recommend Rao's Marinara Sauce if you are going to use jarred sauce. It is a bit pricey, running about 7-8 dollars a jar, but well worth it. Also, I had to bake this dish about 45 minutes in order for it to be cooked completely.

Tuna Noodle Casserole from Scratch

This is a good recipe, but I have these recommendations: Spray the pan with cooking spray rather than use more butter. Use light butter and skim milk. Also, I chopped up red pepper as well and added a additional clove of garlic and another celery stalk. I also added some dried parsley to the sauce/veggie mixture. I mixed some low fat cheddar in with the casserole and put it on top as well. Overall, pretty tasty. It is a bit of a mess to make though, and dirties a lot of pans.
