Whole Grain Waffles

Ahhh... Mmmmm... Yeah... I bought a Belgium waffle maker today and this was the first recipe I made. I followed the recipe as written and the waffles were amazing. Full of healful ingredients and totally delicious. Oh, wait, I lied. I didn't have the whole wheat pastry flour, just used plain whole wheat flour. This will be my go to recipe. Great work experimenting. : ) PS- It made 4 very big and fluffy Belgium waffles.

Lemon Cream Pasta with Chicken

I made this exactly as written. It's very good, very creamy and lemony (hence the name). The whole family loved it. And, in my opinion, the only thing it needed was salt. Next time I make it, I will probably reduce the lemon juice a tad... but that's just a matter of each persons taste. Good stuff.

Gingerbread Biscotti

Let me first say, I always try a recipe as written first (get sick of people making up their own version and rating that). This was terrific. The whole family loved it. Ok, so I didn change one thing... instead of veg. oil, I used light olive oil. Ok, and for the oven temp. I set it at 360 (I was worried from other reviews about burning, and since I was making this as gifts, I wanted to make sure they I didn't screw it up). And I did lay my "logs" on parchment paper.... other than that, followed all the ingredients to a "T" and it came out perfect. I ended up making a second batch because they were so good I wanted some for myself. The consistency was perfect and easy to work with. The spices were spot on... make sure you're adding the correct amount. At first I thought it said 1 1/2 teaspoon, but it was tablespoon... maybe that's where other people went wrong when they said it didn't have the spices that they wanted. Anyway, I dipped in in white chocolate like in the photo and... it's a beautiful thing! Very good. Make them... and follow the recipe... it's good!

Slow Cooker Stuffing

I was told by many that this was the best stuffing they've ever had. Didn't need as much broth and forgot the parsley... used a whole loaf of french bread. Awesome, will make again and again and...

Paul's Pumpkin Bars

I have made this recipe twice now and it's delicious. I wouldn't call them "bars" though. If you follow the recipe exactly, they make 24 perfect cupcakes; moist and yummy. And the icing is amazing and ices all 24 with a smidge extra for tasting. : ) I do add a touch of milk to the icing. Make them!

Chili I

This chili recipe is awesome. I did make a couple changes because I was worried that it would be too spicey for my 5 and 3 year old. I put in 2 T chili powder and 2 jalapenos, instead of the 3 1/2 T and 4 chili peppers. I think I could have put in the rest of the chili powder and it still would have been mild enough for my girls. Oh, I did add a green pepper since it was in my fridge too. It was delicious... even my 5 year old tore it up. We just added a little cheddar and couple crackers and oh my goodness... amazing. It's sweet, and then it kicks you in the butt... just a little. : ) MAKE IT!

Hungarian Goulash II

I followed the recipe exactly and made sure I had sweet paprika - actually found it at World Market - and it was delicious. Even my 2 year old and 5 year old ate it. It's a keeper and will be making it again. Thanks!

Pupu Balls

I thought the plain meatballs were good. I cooked them on med. heat and they held their shape pretty well. But the sauce stuff was too salty for me, and I even used lite soy sauce. I think they would be good over plain rice or something like that.
