Zucchini Brownies

Love making the brownies with zucchini! I love sneaking the veggies in any time I get the chance, especially when the result is as excellent as this is. My kids love these brownies, too. Thanks for the recipe!

Sarah's Applesauce

Very good. I've probably made this ten times so far. I use less water, and sugar. If the apples are ripe and sweet, I add just a tablespoon or two of sugar. If they aren't particularly sweet, I add more. Also, I usually double the recipe. Thanks for the great homemade applesauce!

Easy Batter Fruit Cobbler

Absolutely love this. I use whole wheat flour, and make it a little thicker as well, using a little more flour. I add a little cinnamon, too. I have made this three times so far, using a combo of blackberries and blueberries (I use more fruit than the recipe calls for). Has turned out great every time. Looking forward to peach season.

Easy a la King

Personally, I didn't really like this as is. So, while it was cooking, I added some chopped onions, and mozzarella and parmesian cheeses. I also sprinkled red pepper in it instead of pepper sauce. Served it over angel hair pasta. Kids loved it, even though it had spinach in it. I thought it was much better with the cheese, but still would rate it 3.5 stars with the cheese, 2 stars without the cheese.

Fresh Asparagus and Chicken Casserole

Maybe this recipe has potential, but as is, it seems very bland to me. I added two cloves of garlic, a can of cream of chicken soup, some processed yellow squash (I try to sneak in veggies whenever I can), plus some salt and pepper. I tried it as soon as it came out of the oven, and, even after the additions, it still turned out quite tasteless. So, after it cooked, I added basil, quite a bit of garlic powder, more cheese, and stuck fresh mushrooms throughout, then put it in the fridge. When I heated it back up, I let it cook long enough for the 'shrooms to cook. It was better, but not outstanding. Still needs some zest (not the soap). I will peruse the reviews to see if anyone has good suggestions to zing this up a bit. I think this has potential to be a four-star recipe, but only two stars as it is.

Health Nut Blueberry Muffins

Very, very good--or at least they were good 10 minutes after baking. We'll see if they hold up for a couple of days. I doubled the blueberries--I like my muffins that way. They were moist and delicious. Thank you for this recipe. [Months later] Still loving it.
