Orange Cake

I also would try a different type of topping - something more of an icing than a syrup. I didn't have vegetable oil so I used 1/4 c applesauce, 1/4 c olive oil and an extra 1/4 teaspoon of baking soda, which substituted fine. I also used vanilla and almond extract since I didn't have lemon.

Sweet Potato and Carrot Soup with Cardamom

This was a really good recipe! I added a clove of garlic but I think it'd be better without it. I substituted half of the butter for olive oil, added a pinch of brown sugar, and substituted coreander since I didn't have cardamom. It's a bit spicier than I thought it would be, but a good balance. I added some crushed pita chips on top when serving.

Chocolate Chip Banana Muffins

I don't even like banana and I liked these muffins. I cut the sugar back to 1/2 cup and it was plenty. I also added about a teaspoon of cinammon.

Peppy's Pita Bread

Very easy! I used 2 cups wheat flour and 1 all-purpose - the wheat taste is pretty strong so next time I might try half and half.

Pizza Dough I

I love this. I use 2 cups wheat flour and olive oil instead of vegetable. I also put it in my breadmaker to mix the dough. It's so easy and beats frozen pizza any day!

Best Breakfast Cookie

Love it. The recipe is great to experiment with. I usually cut the sugar in half, use applesauce instead of prune juice; I like coconut and chocolate chips added, cranberries, apricots - basically whatever I have in the cabinets!

Tofu Lasagna

I also added a number of ingredients and cut the cheese in half, and it turned out great! (fresh garlic, fresh basil and parsley, spinach, mushrooms, squash, fresh stewed tomatoes and paste to the sauce)

Marinated Barbequed Vegetables

I added squash which was great. The eggplant was pretty bitter - Normally with eggplant I put salt on the sections after cutting it, then rinse it off after 10 minutes. Somehow it neutralizes the flavor. I didn't do that this time and could definitely tell the difference!

Slow Cooker Chicken Cacciatore

I only used 1 frozen chicken breast and broke it apart after a couple hours. I also added a number of ingredients (fresh herbs, tomato paste, garlic, chopped asparagus, spinach, crushed red peppers). Definitely was good for as easy as it was!

Phenomenal Chicken and Pasta in Creamy Pesto Sauce

I added chopped mushrooms, and used ricotta cheese instead of heavy cream. I forgot to add the wine to the sauce and it was still awesome!!

Zucchini Pasta Bake

It was ok - I added chicken, tomato paste with a little water, and chopped red pepper (which helped a lot). I did a combination of bread crumbs and saltines with some extra spices, and I agree that it might have been better with just bread crumbs vs saltines.

Good, but it is high in salt and needs more liquid. While cooking I found it a little bland, so I just added a bit of tabasco sauce and vinegar to flavor (but we tend to like more acidic soups). That did the trick!

Pesto Tuna Salad with Sun-Dried Tomatoes

Really good! This would be a great way to serve tuna at a party (with some crackers or such). I added some crushed toasted almonds and chopped celery for some added crunch.

Best Steak Marinade in Existence

As the recipe states - don't marinate over 8 hours. I marinated overnight and the worcestershire sauce totally overpowered everything else. Parts of the steak weren't submerged, and the balance was really good!

Chinese Spicy Hot And Sour Soup

I had to add a bit more vinegar for a better sour balance and white pepper for spice. I found dried tiger lily at a local Asian market, and also added a can of sliced bamboo shoots, which is similar in texture.
