Easy Streusel Coffee Cake
I thought this recipe might be wrong because it did not contain any water, which did make it stiff and difficult to spread in the pan, but it came out fine. I only rated this four stars because I think the recipe needs some additions. As suggested by others, I added 1 tablespoon of brown sugar to the streusel, to give it a little sweetness. Also as suggested by others, I made a drizzle glaze of confectioner's sugar, half and half, and vanilla, which definitely enhanced the flavor. I found my cake to be a little dry, but I suspect that was caused by my using 0% fat Greek yogurt, which is what I had on hand. I will use 2% fat Greek yogurt next time. The flavor was very nice; didn't taste like a cake mix at all. I also like that it was very quick to put together. I may try baking it in a 9x13 pan and putting all the streusel on top and adding some regular or mini chocolate chips.

Spice Cookies with Crystallized Ginger
I made these cookies for a friend who loves crystallized ginger and I have to say that they were the most delicious-smelling cookies I ever made. I don't like spice cookies or crystallized ginger, but I thought they tasted delicious as well. Mine did not come out as puffy and soft looking as the picture. They were flatter and pretty crispy. However, they still tasted great. Maybe I flattened them too much before baking. Next time, I'll flatten them a little less and see how that works out.

I love pannetone, but I don't love the calories and fat in the store-bought kind. I was thrilled when I found this recipe because it seemed relatively low fat. I made this for my canasta group the day before Christmas Eve and the women loved it! I used clementine rind instead of lemon (that's what I had on hand) and I think that gave it a more authentic flavor. I also used 1/2 cup sugar, as suggested by others, and 2% Greek yogurt. It was very easy to make, but it did take a lot longer to rise than the recipe suggests (twice as long). Maybe it would be a good idea to use the "fast acting" yeast. Next time, I will probably add more fruit (maybe dried cranberries). My husband and I had some toasted for breakfast this morning and it was really delicious. Can't wait to try French toast or bread pudding with this bread.
