Chicken Florentine Casserole

This was great, although my version was loosely similar to this one by the time I got done. Having to just use what I had, I used green beans instead of spinach, 8 chicken breasts that I boiled and cubed, 3/4 tsp of garlic powder in place of garlic, a can of sausage gravy in place of the cream of mushroom soup, pizza seasoning instead of Italian seasoning, and milk and a dollop of sour cream in place of half-and-half. It still worked out and was really good, so obviously, the recipe is fairly flexible!

Best Bread Machine Bread

Great recipe! I have made it about 8 times in the last couple of weeks with just a few tweaks. I definitely think it needs at least 1.5 tsp salt, and I ended up adding a little milk the last few times as it seemed quite dry despite using proper measuring procedure. Also, I have tried making it with all purpose flour and bread flour. While it will work with all purpose flour, bread flour makes MUCH better bread. If you do have to use all purpose flour, be sure to get the bread out of the machine soon after it's done, or you will end up with flattened bread. If this happens, don't throw it away...just toast the soggy bottom slices before serving and it will still be pretty good. For a twist, I also sprinkled a little instant coffee in the liquids before starting the machine for a bit of color and a slightly smokey flavor.

Sweet Dinner Rolls

These rolls were a hit and a half! My little 100lb grandmother ate 3 of them, and that's saying a lot for her. My family is fairly picky about new recipes, but this will definitely be a new favorite. Rather than measuring out the butter to spread on the two flattened halves of dough, I just spreaded until it looked right...like very generously buttered bread. I think it ended up being a bit more than the recipe called for.

Best Spanish Rice

This recipe is awesome...even better than our best Mexican restaurant here in Terre Haute, IN. I did make a few changes. I used 2 tbsp butter instead of oil, and I used a quarter onion instead of measuring out 2 tbsp. Also, I didn't really wait for the rice to brown, just until a little translucent (something like 1 minutes). After adding the water, bullion, and salsa, I cooked a few minutes until it started boiling before covering for 20 minutes on low. Regardless, this was "¬°Muy bien!"

Microwave Cake

Building Gingerbread

This gingerbread is great for building! It's the firmest recipe I've found so far. It was really dry, probably because I let the molasses cool a little before adding the dry ingredients, but after warming up the crumbly dough in the microwave and added a splash of water, I was able to roll it back together for the most part.

Strawberry Cheesecake

This cheesecake is delicious and easy! The first time, I made it with fresh strawberries, and the sauce didn't seem very sweet. The second time, I used plain frozen strawberries with a little sugar added, and it was much better. The third time, I used plain frozen blueberries, and although I realized while trying to process them that they really needed thawed first, they were also very good with a little sugar added.

Fruit Salad Dessert

I didn't really follow the recipe closely besides the dressing, just sort of eyed it, but it turned out delicious. My family would probably have agreed if I hadn't eaten it all myself! I used mandarin oranges out of a can, a few strawberries, green grapes, a banana, mini marshmallows, and store-bought whipped cream. Be careful...this stuff is dangerously good!

Pork Normandy

This was delicious! I had more meat so I doubled the recipe. I made some minor modifications like using regular apple cider and adding some garlic during browning. I just blended the sauce at the end in the vitamix and served it without cooking it further. There was plenty of sauce left afterward, so I used it later over some minute steaks. Yummy!

Soft Sugar Cookies IV

Overall, these cookies were amazing! I'm not usually a cookie fan, but I and everyone else loved them! My only "complaint" about these cookies was that the recipe made 32 cookies instead of 24 (well, 33 but don't tell anyone). They would probably be good with ~3/4 cup of chopped pecans mixed into the batter.
