Banana Muffins II
VERY good! I added 1 tsp. vanilla, as others suggested and also a little bit of water (maybe 1/4 c.?) to ensure they would be moist (most muffins I make from scratch tend to turn out dry). Next time though, I plan on using Canola oil instead of butter, to make them more healthy. Also, will add a little bit of honey. Nice alternative to banana bread.

Scalloped Corn and Broccoli
I've been making this recipe for so many years now, but I use soda crackers in my and for the topping. I also use dried onion mixed in and no flour. We usually have this at Thanksgiving and at Easter as side casserole dishes.

Cream Cheese Squares
I've been making these for years. My hubby loves them -- it's one of his fave desserts. The only thing is that it's "dangerous" for me because I could eat the entire filling even before spreading on the base layer!
