Rosemary Chicken with Orange-Maple Glaze

Very good recipe and the taste is fantastic. I give 4 stars because my sauce never thickened up, so it looked like I poured juice all over my plate (but was delicious when drizzled over cooked asparagus, which I served on the side) AND because I dirtied up almost every pan in my kitchen. Be prepared to ask for help with the dishes!

Stuffed Peppers

Very good pepper recipe. I assemble all of the raw ingredients (including raw meat), stuff the peppers and put in the crock pot for 8-10 hours. Its super easy and tastes great. I also put a squeeze of ketchup on top of each pepper before cooking. I also put quite a bit of salt on it as I'm eating it, but that might just be my tastes.

Ground Beef Shepherd's Pie

This was definately a disappointment. I followed the recipe to the letter and found the potatoes on top to be watery and gritty, and the meat mixture was soggy. This recipe did not do it for us. I will not be making it again.

Spaghetti Sauce II

Excellent! Freezes so well - I made 10 times the recipe w/ fresh tomatoes from my garden and I'm using my last batch this week. I'm sad it's gone! I followed the directions to the letter, but do not add meat - I add that occasionally, but the sauce is great with or without it.

Exquisite Pizza Sauce

I made 40 servings of this spaghetti w/ fresh tomatoes from my garden and froze in 2 cup increments. The sauce is good and I will definately make again, but there are some changes I am going to make. The honey is too overpowering - I'd recommend at least cutting in half, if not eliminating all together. (I have to add red pepper flakes when it put it on the pizza to cut the sweetness). Also, the sauce has a grainy consistency due to the parmesan cheese - I will add it in slowly next time and stop when it overpowers the texture of the sauce. Otherwise, I think that the flavor will be good next time. I'm not sure if the problems I noted are because I made so much or if they would be present in smaller amounts, but I think that it definately needs tweaking.

Smothered Mexican Lasagna

This was very good - the taste is fantastic (I did as other reviewers suggested and added a layer of refried beans w/ spicy salsa and a light layer of cheese to each layer of tortillas). So, it went like this: tortillas, bean/salsa mix, ricotta cheese mix, meat mix, thin layer of cheese; repeat about 3 times and finish with tortillas and a light sprinkling of cheese and green onion. I thought, however, it was a bit of a pain to do all of the layers - it took me almost 30 minutes just to put it together and I dirtied up many dishes. Also, I used reduced fat ricotta cheese and lean turkey breast - for a 3x3 square piece, there is about 5 grams of fat per serving and it tastes fine. It's very filling, so one square was fine for me and hubby had two. Finally, there is a TON of food. I would recommend assembling in two 8x8 pans and freezing one prior to cooking. There is no way our family of 3 can eat all of it!
