Oven Pot Roast

This was delicious. Made it almost exactly as the recipe called for. I did not have dry vermouth or even dry wine... but I tossed in what wine I did have! The roast was moist and delicious, and the gravy was amazing. My husband thought it rivaled our annual Christmas roast- and that is always a much more expensive cut of beef! I will be making this again in the future.

Refrigerator Dill Pickles

Pretty amazing recipe-- easy to make and the pickles were delicious. I even went so far as to reuse the brine once with another set of cukes and they were just as good. Once they were gone, adding a bit of oil to the brine makes for an amazing oil and vinegar dressing for salads or even as an addition to potato salad.

Seven Layer Taco Dip

This recipe is a hit with my family- although I have a couple of suggestions. Most importantly- add guacamole. It's simply not as good without it. Second- it's good the first day, but better the second day. Therefore, I didn't add the lettuce. Not so sure that would look so pretty the second or third day. I did, however, add black beans. Yummy!

Quinoa and Black Bean Chili

This is my new favorite chili! The quinoa is great. We make it in the rice cooker before adding it to the chili. Couldn't be easier. I love the added protein for my veggie kids. One thing we noticed (we've made this twice) was that the zucchini gives this a strange feeling when it's in chunks. Diced wasn't small enough, so the second time we shredded it. This was perfect. I could eat this every week. Of course, we do serve it with a little sour cream and a sprinkle of cheese. Probably kills the calorie count, but it's sooo good. :)

Oriental Cold Noodle Salad

Yummy! I added chopped fresh broccoli, a lot more carrots than called for, and used a less of the noodles (just what was on hand). This was a crunchy, tangy, delicious salad. I would definitely make it again. Big hit with both the meat eaters and vegetarians of the house.

Red Velvet Cupcakes

Yummy, light and moist on the inside, just a little crisp on the outside. Topped them with cream cheese frosting. My family loved them, and they're quite pretty. The amount of food coloring freaked me out, but I guess that is to be expected for a red cupcake! :)

Slow Cooker Corn Chowder

This was a great soup to come home to after a long day of work. I did modify it a bit, to make it vegetarian. Left out the ham, and used veggie bouillon instead of chicken for my kids sake. Sprinkled a little cheese on it when serving and we were all pretty impressed. (although hubby and I both agree it would've been better with the meat)

Delicious Black Bean Burritos

Yummy!! Cooked this tonight for my vegetarian kiddos. I did make a couple of changes- mostly that I used 10 six inch corn tortillas rather than 2 big flour tortillas. This really is enough to feed a family of 4. I also used the whole red pepper and followed the advice of one of the other reviewers by melting a pinch of cheddar cheese over each tortilla. Mixed some of the extra cilantro into the rice I served with it, and we were ALL impressed. Gluten free and vegetarian. I do think that some shredded beef or chicken would have been tasty with it, but that's only because I'm a carnivore. :)

Janet's Rich Banana Bread

Wonderful, quick and easy. I added chocolate chips, because chocolate makes everything even tastier and probably more walnuts than were called for (didn't measure), so I ended up needing a bigger pan to bake it in, but it was perfect. Everyone loved it!

Amazing Slow Cooker Chocolate Cake

Made this yesterday for a pot luck. It was ok. Flavor wasn't bad, but the texture was a bit off. My husband wouldn't eat more than a bite, and one friend couldn't bring herself to finish her portion. We all agreed that it would have been better with something to offset the 'feel' of it. Mint chocolate chip ice cream would have been divine with it. Or maybe even fresh strawberries with whipped cream. But alone, this was too mushy. Also, not a very pretty dessert. It was really easy to cook, and definitely fulfilled our craving for chocolate. All the ingredients are kitchen staples, so it was a great "oh my what will I bring tomorrow" item. Might try it again, and experiment with toppings. Just not great by itself.

Ken's Minestrone Soup

So yummy! I don't normally like minestrone, but I needed something my little boy could eat after oral surgery and small bites of fairly soft veggies, beans and pasta seemed a nutritious choice. Grocery store was out of zucchini, so I used summer squash. It added a nice bit of yellow to the reds and greens. Also added pasta to give it some staying power to fill our hungry bellies. Topped it with fresh grated parm and served it with fresh Italian bread. Definitely will be making this again. Yum!
