Jalapeno Hummus

This stuff is amazing. Do yourself a favor and make it! I used a little bit of the liquid from the garbanzo bean can and a whole (seeds and all) fresh jalapeno instead of the canned jalapenos. I like things really, really spicy so next time I might add two instead. It is soooo good. I almost ate all of it myself!

Black Bean and Rice Enchiladas

We LOVE this recipe. I think it'd be great as is, but I have made a few adjustments to make it healthier and vegan, to suit our tastes. Instead of olive oil, I cook the veggies in step 2 in veg broth. I added a chopped zucchini to that step and halve the rice to make up for it. I lined the tortilla with baby spinach before adding the mixture. I skip the cheese totally and top it with chopped cabbage. I use enchilada sauce instead of salsa. It makes a TON, so it's worth the time it takes to make this dish. It's not difficult to make, you just have to plan ahead to have it ready by the time you need it.

Egg Casserole

Love this. The only reason I didn't give it 5 stars is it took longer in the oven than the recipe states. It took about 40 minutes. I did a few things differently. I added onion, mushroom and a chile. I mixed the egg with the rest of the stuff and it didn't seem eggy enough so I added 2 extra eggs and a little milk to the bottom of the baking dish, like the recipe directs. Then I dumped the egg, sausage, bread, cheese, veggies on top of it. Also I used just a little less cheese than the recipe. This is delicious. It reminds me of stuffing you'd eat with poultry, probably because of the bread/sausage combo. It is hard to stop eating it!

Stovetop Granola

Divine. On the suggestion of other reviewers, I doubled the oats, added some vanilla and cinnamon, added the almonds, cranberries and some dried apples for the last five minutes on the stove, and baked for about 10 minutes at the end. Next time I may cut the brown sugar a little bit, but it's really good. I also may use agave nectar instead of honey/sugar and add coconut and other fruits. I'm excited about all the possibilities and can't believe I never thought to make my own granola before. It's easy, delicious, inexpensive and free of chemicals/preservatives/etc.

Good 100% Whole Wheat Bread

I tweaked this a little. I used: 1 1/2 teaspoons active dry yeast 1/4 c. gluten 3 cups whole wheat flour 1 1/2 teaspoons salt 1 1/2 tablespoons honey 1 1/2 tablespoons butter 1 1/4 cups warm milk This is the first loaf of bread I've ever made, and it was great. The only change I'll make next time is I will use the light crust setting. (I set it on medium crust the first time.)

Slow Cooker Lasagna

Yum! With a few tweaks, this was really good. I used 3/4 lb. ground beef, added a can of diced tomatoes with their juice (since others said it was on the dry side), and some Italian seasoning. I cut the salt down to 1 tsp. (but next time will cut back a little more because I don't like a lot of salt). I used the whole 16 oz. container of cottage cheese. I left it in my crock pot accidentally for 8 hours so the noodles were a little softer than I'd like, but it was still very good. Next time I'll leave it in for about 6 hours and might try spinach and mushrooms instead of ground beef, just for a healthy change of pace.
