To Die For Blueberry Muffins

I made these for Valentine's Day morning. I used a heart shaped muffin tin. The only substitution I made was I used 1/2 cup white sugar and 1/4 cup brown sugar, as I was low on white sugar. They were amazing.

Chewy Crispy Coconut Cookies

Fantastic. I followed the recipe exactly and they came out great. Definately a keeper and will be a frequent addition to our cookie jar. Next time I will try adding chocolate chips for a different variety.

Fideo (Mexican Spaghetti)

Very Good. I used a can of rotel tomatoes with green chiles, rather than the roma tomatoes. I also had to add more water at about 8 minutes into the cooking time. I found that the noodles needed extra cooking time. I increased the time to 15 minutes. Very good, will make again.

Chocolate Chip Pumpkin Cookies

Simply delicious. I changed a few things, though. I used 1 c. regular sugar and 1 c. brown sugar. Increase cinnamon to 1 1/2 tsp. and nutmeg to 1 tsp. I only used butter, no shortening.I also added 1/2 cup of oats. What a hit with my family, and in my kids classroom.

Cinnamon Hazelnut Biscotti

I toasted the hazelnuts and chopped them before adding them. I also added 1/4 cup chopped dried cranberries which I tossed in 1 tsp. flour before adding. They were delicious.
