Spaghetti Carbonara II

Made this for breakfast because who says you can't have pasta for breakfast? I eyeballed the measurements and left out the wine and parsley as I didn't have any. I used whole wheat pasta and mixed the eggs, bacon, onions, cheese, and garlic in a bowl together and then added the hot pasta to sit for a minute or two. Perfect! I think a couple of spoonfuls of pasta water will help with the dryness issue some people seem to have. I added some to the leftovers to make reheating easier. I definitely will make this again for breakfast, lunch, dinner, snack...

Fluffy Pancakes

I'm a person who can cook everything and anything but pancakes have always defeated me. They stuck and/or burned no matter how much cooking spray I used or how low I kept the heat... until now. This recipe is delicious and the pancakes came out fantastic. I used oil instead of butter to save me washing another container used to melt it and added nutmeg, cinnamon, and almond extract. The batter's a bit thick, but with about a teaspoon or so of extra milk added, it was perfect. I definitely will double the recipe next time as I want extra to freeze for a quick breakfast.

Banana Banana Bread

The only thing I didn't like was that the crust was a bit dry, but the rest of the bread was very moist with nice chunks of banana inside. Oddly enough, the crust got softer when I refrigerated it, not dry as it was when I first took it out. Still, I give it five stars.

Best Chocolate Chip Cookies

These cookies are the best! I'm baking them right now for the third time in as many weeks. They're gone within two days. I sometimes add in almond extract along with the vanilla if I feel like it. I also add in peanut butter chips with the chocolate. So good! Easy to freeze for later baking too! I just wrap the dough in a double layer of plastic wrap and place it inside a freezer bag.
