Rich Chocolate Brownies

These were ok, very quick and easy and used ingredients that are usually on hand. Too sweet, so they definitely don't need any frosting, but they worked when I was looking for a quick chocolate fix. I subbed brown sugar for white and sunflower oil for melted butter cause that's what I had on hand and they still worked out.

Greek Rice Salad

I have made this 4 times in the past 6 weeks, it is incredible! Perfect for the summer when it's just too hot to cook. Some tips that I've found make a difference: 1-Adding a couple tablespoons of white balsamic vinegar really add another dimension to the flavour, and 2-DO NOT omit the avocado! It breaks down a bit in the salad to give a great creamy texture, I made it once without it because I didn't have one and the texture was nasty--kinda dry and oily at the same time. Other than that the only thing I change is using green olives out of personal preference, but I'm sure it's just as awesome with black. Enjoy!

Baked Honey Nut Chicken

I'd give this 2.5 stars...it was ok, but not great. I don't like meat to be super sweet so I cut back a bit on the honey and added some strong dijon mustard to the egg mixture to cut the sweetness and give it some bite. The taste was ok but the texture was off...the bread crumbs stayed dry and untoasted even though I cooked it for the full time. I did really love the pecans though, they toasted perfectly. I will probably try this again, but thinking of trying crushed corn flakes instead of the bread crumbs. Whatever you do, definately grease your baking dish or it will stick!!!

Double Chocolate Brownie Cake

Amazingly moist cake with a full, rich flavour. I used Devil's Food cake mix and pistachio pudding mix--turned into a yummy chocolately and nutty combo! I baked it in a 9x13 baking dish (because I don't own a Bundt pan) for 35 min and it was cooked perfectly. Instead of frosting the cake I drizzled it with a caramel sauce recipe I got from this site. I can't wait to make it again and experiment with other cake mix and pudding flavours!

Mocha Chocolate Chip Banana Muffins

W-O-W!!! Awesome recipe, delicious taste and a great texture (slight crust on the outside, soft and moist inside). I made this after reading other reviews and followed others' suggestions of using half margarine half applesauce, and 1/2 cup Splenda with 1/2 cup brown sugar (total of 1 cup was definately sweet enough). Being a huge coffee lover, to intensify the coffee taste I added a whole 1/4 cup of cold brewed coffee (had to add a tiny bit more flour so the batter wouldn't be too liquid). I also don't own a food processor so was doing the 1st step by hand, and wasn't able to get all the chunks out of the mashed bananas, however I thought this really added to the finished product. I will definately make these again!! I think next time I might try adding some flaked coconut.

Orange Muffins

Nice simple, healthy recipe with a delicate orange flavour. The kitchen smelled like heaven! I made these over the holidays for my family and they were met with rave reviews. After reading other reviews I followed some of the suggestions: used fat free plain yogourt instead of oil, subbed Splenda for the sugar, added extra OJ (just sort of eye-balled it until the consistency of the batter looked right)and doubled the amount of orange zest. I also folded in a generous 1/2 cup of sliced almonds, which really added to them. I will definately make them again but next time will add even more zest and maybe some orange extract to really make them orange-tasting!

Salsa Guacamole

Amazing! Was looking for a way to use up some ripe avocados and picked this because it looked simple. It was very easy to make and delicious! I subbed lime for the lemon as that is what I had on hand, omitted the garlic (only because I'm not a huge fan), and used a medium-hot chipotle-flavoured salsa (added a great smoky flavour). This is better than what I have had in Mexican restaurants!

Oatmeal Blueberry Muffins

Great base recipe. To make them even lighter, I used Splenda instead of sugar, unsweetened applesauce instead of oil, and skim milk. I also used about a cup and a half of wild blueberries and added 1/2 tsp of vanilla to the batter. They taste awesome and everyone in the house gave them 2 thumbs up. Not overly sweet, I like that about them but if you like sweeter muffins I would add more sugar or sweetener. Definately a keeper!
