Key Lime Pie - Low Carb Version

Chicken and Dumplings III

This is the quick recipe taught to me by my German grandmother with a few slight differences. We used a whole chicken boiled with bay leaves. Remove chicken and bay leaves and allow chicken to cool a little. While it is cooling, I put two cans of dumplings, each biscuit cut into halves, into the pot and cook without stirring, just push the dumplings back under water occasionally until they are plump and cooked. Add back shredded chicken, salt and pepper to taste. Be sure and buy cheap canned biscuits because they hold up better in the water.

Classic Cherries Jubilee

So good! I didn't have oranges so I used Clementines. I also used the frozen organic cherries. My husband dubbed it "moor-ish". I should have taken a picture because when you put it in a parfait glass it is so lovely. Thank you Wilemon!

Peach Cobbler IV

One of my favorite quick cobblers. I add the peach pie filling in though and as it is just beginning to brown I sprinkle a teaspoon of sugar over it then let it brown the rest of the way.

Honey Baked Chicken II

This is super easy and delicious. Everyone loved it, including my pickiest eater. Another reviewer commented on the way her house smelled so good while cooking it and I agree. By the time the chicken was ready, my entire family was in the kitchen and circling the stove. I served it with white rice and corn.

Pecan Pie V

I have been trying for years to make a successful pecan pie as it is my sidekick's favorite. This recipe is the best pie I have ever made. I had to bake it for just a bit longer than recipe but I covered the pie's crust with foil as soon as it started to look browned so it wouldn't burn. I love it served with ice cream!

Sugar Cookie Icing

I really liked this icing. I had to add more milk and corn syrup as it was a bit thick for easy use at first, but once I got that consistency right, it spread easily. It hardens nicely so you can layer the cookies without messing up the design and it tastes really good. I'm not so great at cookie decorating but this recipe made it easier. I just bought the decorating pens and after it had hardened a little I was able to paint on elaborate snowmen and Christmas scenery and it stayed beautifully.
