Rachael's Superheated Cajun Boiled Peanuts

I am Sooooo impressed with this receipe!! No longer does this Jersey Girl have to wait to go down South for her favorite snack! The spice is just right, the saltiness is just right.... the only thing I might change is the cook time, as many of the previous reviewers have stated... I would keep in the slow cooker closer to 30 hours for for a softer bite, HOWEVER.... LOL, I couldn't help sneaking bowl after bowl after about 24 hrs of cooking... ALSO... no one talks about storage life... I've checked and these can stay in the fridge safely for alittle over a week,...although some sites say almost a month is fine, but to be on the safe side, I would stick with the former.... ENJOY!! FABULOUS receipe!!!!

Danish Potato Soup

This is a fabulous soup and even better when you make the modifications that Mike 3601 and I have recommended.... The red potatos are a great idea, they add a much better flavor and texture to the soup (it is called a soup, but this is much closer to being a chowder...) I too added the cheese and the extra cream with a wonderful result!! Now for my modifications... I didn't have a ham bone. I did however have ham hocks... I hadn't used them before and I was disappointed that they had less meat on them than expected, but I used them to flavor the base and that worked out wonderfully.I also used a chicken broth base... I then browned about 3/4 lb of thick-cut bacon coarsly chopped and added it to the base. You barely notice the missing ham. One thing that I did that made a nice shortcut was to buy a bag of shredded cabbage mixed with carrots (pre-made for coleslaw, I think) it really cut down on prep time. I also think that you could modify this with one more step and add a can or two of corn kernels and make this into a Potato Corn Chowder! With these little modifications, you will have a soup (chowder) that you will be proud to pass on to friends and family.... Oh... Don't forget to add the seasoned croutons to the bowl just before digging in!! Deee - lish!!!!!

Hearty Split Pea Soup

I just got finished eating.. Oh My Goodness, this soup is AWESOME! I looked at everyones reviews and took the best of all of them and came up with these hints... FIST and most important, if you are on a diet, just enjoy this recipe and don't try to alter it. Splurge... it's worth it! I browned bacon to use the grease to sautee the onions and then layered the ingredients. I used a hambone from Honey Maid Hams that I had left over. I also dumped in the bacon that I used initally. I also added shredded carrots and used more chicken broth than suggested.... I also added an extra 1/2 bag of peas half way thru the cooking time for added texture.... AND I think although alot of people skipped the milk, I think it is an important ingredient as it giives the soup a smoother texture and helps to thicken it, which helps with the additional liquid that had been added. It is delicious and satisfying! OH! and you can't forget to add crispy croutons to the top before you dig in!!! ENJOY!!!
