Christmas Brunch Casserole

I have had this recipe for a long time, and was about to post it until I found this one :) This is my favorite "family" recipe (haha), although there are a couple of slight differences. My recipe calls for 6 cups of rice crispy cereal, 20oz of cheese, and only 4 eggs. This will serve more folks, but you'll need a bigger baking dish :) Also, you'll want to make it the night before and refrigerate it, as this will soften the rice crispy cereal. Otherwise, if you bake it right away, the casserole will have a bit more crunch to it.

Banana Blueberry Muffins

Made these last night. Took the advice of one member and mashed 1/2 the blueberries and used 4 ripe bananas. Followed recipe to the T and they turned out very tart and BLAND. Daughter and hubby wouldn't eat them.

Feta Cheese Mashed Potatoes

Made this with chicken breast for dinner tonight. It was actually very good! I used fat free half and half instead of the cream. The feta added just the right amount of cheese flavor, and I didn't have to add butter, which is a nice low-fat change.

Slow Cooker London Broil

I used two cans of mushroom and tomato soup instead of one, and the sauce turned out really tastey. London Broil is NOT the meat I would use in this recipe. After cooking on low for 8 hours, it came out very hard.

Delicious Ham and Potato Soup

NUMMY FOR MY TUMMY!! This was AWSOME! I followed the recipe to the T and added about 1 Cup frozen peas to cook with the other veggies. I also used Skim milk. Took a little while longer for the milk, butter and flour to thicken, but turned out DELISH! Top it with some FF sour cream and 2% shredded cheddar cheese :) 3-year-old and hubby loved it!!

Country Style Fried Potatoes

This was ok. You HAVE to use a non-stick pan for this, otherwise you'll have a big brown crusty mess on the bottom like I did. Took a long time to get the potatoes done, and it was pretty bland, even after adding 1/2 small onion. Could have used more spices.

Skillet Green Beans

This was ok. I used 1lb of frozen green beans, but they were way too crunchy. I would recommend fully cooking the fresh/frozen beans and making sure they are soft before adding the spices and sour cream. Next time, I will use canned beans. Also, I had to double the sour cream and spices because they turned out pretty bland just following the recipe.

Cowboy Chicken

Followed this recipe exactly and the chicken came out very very dry. 1 hour is too long for 4 chicken breasts. The flavor was good, but way too spicy for my 3-year-old.

Ham 'n' Cheese Mashed Potatoes

Best mashed potatoes I've ever made :) Instead of the heavy cream, I used 1/2 Cup skim milk. I used 1/2 cup cooked ham as that's all I had left, and 2% sharp shredded cheddar cheese...Still turned out wonderful!

Spaghetti Italian

Ummm HELLO...YUMMY! According to my family, it's the best spaghetti I've ever made! I didn't make any changes and let it simmer for a few hours to get the sauce nice and thick. Not to mention it's very quick and easy to make :)

Banana Oatmeal Cookie

Pretty decent cookie..although very cake-like in texture. Changes I made are as follows: Used 1 cup flour and 1/2 cup WW flour. 1 teaspoon of cinnamon. 1/2 cup butter with 1/4 cup applesauce to replace the shortening. 1/2 cup of sugar instead of 1 full cup. 2/3 cup of raisins and no nuts. Baked at 350 for 15 min.

Fantastic Black Bean Chili

Decent chili. Not the best I've had, but I was able to use ingrediants I had on hand. I used twice the tomatoes and only 2 cans of black beans. I also spiced up the turkey with a teaspoon of Cumin. I agree that it could have used more seasoning. Using a dollop of light sour cream and light cheddar cheese tops the dish off well.

Chocolate Chip Cookies V

Umm yeah, I made these with chocolate pudding mix this evening and my husband ate one and a half trays before I got done baking the rest. And this is coming from a guy who usually doesn't like chocolate... I baked them at 350°F for 15 minutes and decreased the salt by half a teaspoon. I used a standard cookie scoop and they came out perfect! I'm going to try vanilla pudding next time.
